Swedish Meatballs I
This is a good easy weeknight dinner! To make it a little easier even, I used store-bought turkey meatballs. Since my husband HATES anything mushroom, I used two cans of low-sodium Cream of Chicken soup. It's very easy and this recipe came in handy when my father-in-law popped in unexpectedly for dinner. These meatballs, with a side of egg noodles, is a delicious quick meal.

Garlic Cheddar Chicken
This was a great quick and easy weeknight meal. I also used an olive oil mixture (1/2 oil, 1/2 butter) to cook the garlic and used turkey chops instead of chicken breasts. This was an instant hit--my husband went back for seconds and my finicky toddler didn't offer any of his dinner to the dog (a rarity these days). Good, basic recipe that I'll definitely make again.

Tiramisu Layer Cake
This really tastes like regular Tiramisu! I didn't have any coffee liqueur, so I just substituted a little coffee, and this still came out tasting like my husband's favorite dessert without the fussiness or difficulty of tiramisu. I've already been asked to make this again.
