Enchilada Casserole II
This recipe is really good! I added a can of corn and used taco mix instead of the individual spices. I also only used two tortillas, instead of four. My pan would not have held four layers. My family loved it! My two-year-old ate two helpings, and there are no leftovers! This is a quick, easy, and inexpensive meal. I could probably make it ahead of time and refrigerate it, too, which I love as a working mom. I will definitely make it again.
