Lime Chicken Soft Tacos

Delicious- and easy enough for a quick weeknight dinner. I made the recipe exactly as written and loved the results. The chicken has a wonderful, slightly tangy flavor. I used whole wheat tortillas in a small size, which made these a little healthier and easy to eat with the hands. I'll be making these again!

Veronica's Apple Pancakes

I was really disappointed in this recipe. I made it exactly as the directions stated, adding a pinch of extra cinnamon as other reviewers have suggested. The pancakes smelled delicious while cooking, but were not pleasant to eat. The consistency was gummy and rubbery. Not appetizing at all. What a let down!

Zucchini Egg Bake

I made this recipe for a brunch and it was a big hit. I followed the recipe exactly and it was quick and easy to prepare the morning of the brunch. The smell of the zucchini, garlic, onion and butter being sauteed is so amazing! I cooked the whole mixture about 23 minutes and it was perfect-- light and tender. My friends loved that it wasn't as dense & heavy as a quiche and you could really taste the zucchini and herbs. It doesn't cut into easy slices like a quiche-- the eggs don't hold the vegetables together and so you'll just have a scoop on your plate. But once you taste this, you won't care a bit about presentation. It is really, really good. I topped my zucchini egg bake with fresh tomato slices and a touch more grated parmesan cheese just after taking it out of the oven. I'll defintiely make this again. It's a perfect summer dish.

Maple Salmon

Really good! This dish was very easy to prepare and perfect for a weeknight meal. The marinade is so tasty-- not too salty, not too sweet-- the result was a big hit at my house and I'll definitely make this again. Since I was pressed for time, I only marinated for 20 minutes, and it still tasted great. Next time I'll marinate longer for even more flavor.

Lemon Herb Chicken

Very simple, quick and tasty recipe. I made the recipe exactly as written and it turned out very nicely. The chicken was tender and the lemon and basil flavors were subtle and delicious. I served the chicken over whole wheat couscous and it was a healthy, no-guilt meal. I'll definitely be making this one again!

Key Lime Cake II

This is a very easy, very tasty recipe. The previous comments stating that this cake has much more lemon flavor than lime are absolutely correct. I would never have tasted this blindly and thought it was a key lime cake. However, it has fantastic, rich, moist lemon flavor and will not disappoint if you like lemon. I made the recipe exactly as written, making sure to grease and flour the bundt pan before adding batter. I waited for the cake to cool before adding glaze, and then topped with lime zest and fresh blueberries. Served it to friends at a BBQ and they raved. It really is just delicious. I'll make it again!

Caramelized Onion and Gorgonzola Pizza

I used whole wheat pizza dough from Trader Joe's. Reduced the gorgonzola to 1/2 lb, as others suggested and also added a bit of mozzarella. I also added chopped walnuts. The flavor was absolutely delicious-- my guests loved it. However, I think that the pizza needs to cook at a higher temperature because my dough was still a little raw after 15 minutes at 425. I upped it to 500 for the second pizza and 12 minutes at that temp. worked well. Leftovers tasted great but didn't look as good. Will probably make again, with some variations.

Alaska Salmon Bake with Pecan Crunch Coating

Cornbread Casserole

This is delicious! I don't usually cook things based on canned or packaged ingredients, but was rushed for time and this looked quick and easy. I made the recipe exactly as listed, except I added only 4 oz. of shredded cheddar cheese to the top instead of 8 oz.-- and I used reduced fat cheese. YUM! The texture is perfect, not mushy at all. The flavor is just right and the aroma while baking is incredible. My husband and I both really enjoyed it and I'm sure I'll be making it again.

Apple Honey Bundt Cake

Absolutely delicious! I followed the recipe exactly, using Granny Smith apples and this cake is fabulous. It comes out really moist and flavorful. Baking time for me was 60 minutes. I baked it in a fleur de lis bundt pan (wedding present), which created nice detail on the sides, then sifted powdered sugar over the top. I was considering caramel sauce, but this cake really doesn't need any extras-- it's delicious as is. I'll be making this more often, definitely. Thanks for the recipe!

Baked Mashed Potatoes

Absolutely delicious! I used 2 Tbsp. minced garlic instead of the onions. I also topped the potatoes with shredded cheddar cheese. It turned out creamy, delicious and flavorful. I will definitely be making this again!

Chocolate Covered Cherry Cookies II

These are delicious! I served them at a holiday party and my friends really liked them. The first batch wasn't so pretty, as the chocolate didn't spread easily and sort of clumped on top. But I added a touch more cherry juice to the chocolate the second time and that made it very spreadable-- much prettier presentation. I'll definitely be making these cookies again!

Seven Layer Magic Cookie Bars

These bars are super easy to make and are delicious! My only complaint is that it was really, really hard to get them out of the pan. I won't make them again until I figure out a better way to prevent the sides from sticking & getting hard. However, they were SO tasty that it will be well worth figuring that out. A great recipe!

Easy Sugar Cookies

These cookies are really easy to make. I followed the directions exactly and had no problem. The cookies came out looking great and were light and moist when eaten. I added green decorative sugar to the top for the holidays. They aren't the most flavorful sugar cookies I've ever had, but they also require fewer ingredients than most. Next time I might try coating them with a white & brown sugar mix.

Favorite Old Fashioned Gingerbread

I love this gingerbread recipe! I've made it several times now and it always turns out perfectly- moist and springy, delicately spicy and completely delicious. This is a holiday favorite that I plan to continue making year after year.

Cinnamon Belgian Waffles

I was disappointed in this recipe. The waffles were easy to make and look nice, but they got really soggy after taking them off the waffle iron. I cooked them the normal amount of time... perhaps these need extra time on the iron? Anyway, the soggy consistency wasn't tasty, and neither my husband or I particularly loved the flavor. I'll keep looking for a great waffle recipe. I used 1 Tbsp. cinnamon as other reviewers suggested. Didn't have buttermilk so I used skim milk with a bit of lemon juice. I did separate the eggs and think that beating egg whites does make a difference in the lightness of these waffles.

Garlic Chicken

So simple, and absolutely delicious. Even my husband, who's not a foodie, raved about this chicken. I used Italian seasoned bread crumbs, but otherwise made no changes to the recipe. I'll definitely be making this again!

Good Old Fashioned Pancakes

Great pancakes! I used only 3/4 tsp. salt and added 1 tsp vanilla, as other reviewers suggested. After mixing the batter I did have to add a touch more milk, as the batter got a little too thick. They were really tasty and so easy to make that I don't think I'll ever use a boxed mix again.

Make Ahead French Toast

I used only 3/4 cup brown sugar and 1 cup milk (as others have suggested) I also added a pinch of cinnamon and a pinch of nutmeg. I used challah bread instead of French bread. This was delicious and a big hit at my brunch. I was careful to grease the pan well and not overlap the bread and didn't have any problems with the toast sticking. With the reduced milk and sugar, it was neither too soggy nor too sticky. Two thumbs up! I will definitely make this again.
