Apple Cake V

This was a quick and easy recipe. The only change I made to the instructions was to add a teaspoon of cinnamon to the dry ingredients. It was easy as can be to assemble and glaze. We ate slices while it was still warm and this is definitely the way to go. This cake is fantastic warm. However, it does not sit well. Probably due to the large amount of vegetable oil in the recipe it gets oily and greasy after sitting overnight. The leftovers were not particularly appealing. But if you're baking this to be eaten the same day, it's a slam dunk.

Easy Raspberry Sorbet

This sorbet was certainly very easy to make. The only changes I made were to add a bit of lemon zest with the raspberries and to put the mixture in my ice cream maker for 30 minutes before putting it in the freezer. The flavor is very nice. The lemon cuts the sweetness of the raspberry and gives it a little bit of tang. It's very refreshing. I think what threw me off was the texture. I could really feel and taste the Jell-o in this sorbet, and not in a good way. Despite whisking the mixture well, little lumps of Jell-o remained in the final product and I didn't find that appealing. Also, the Jell-o gave the sorbet the taste of artificial sweeter, which I didn't like. I might make this again, but probably minus the Jell-o.

Best Ever Chocolate Chip Cookies II

These are pretty good cookies! I decided at the very last minute to make a dessert and needed something really quick and easy that I could throw together with ingredients in my pantry. This recipe fit the bill perfectly. It took just minutes to whip up the batter and get the cookies in the oven. After 8 minutes they came out crispy on the edges and soft in the middle-- just perfect. For simple, no-fuss cookies these are pretty great. I'd make them again.

It's Chili by George!!

I think this is a good base recipe that requires some tweaking by each cook to make it suit their taste. I've been making the Fantastic Black Bean Chili on this site for years and love it, but decided to give this recipe a shot for the sake of trying something new. I used turkey instead of beef and (as per some of the suggestions here) stewed tomatoes instead of the tomato juice. In the end, I thought the texture of the chili was great, but it was too salty (??) and a bit too tomato-y for me. I missed the beans that I enjoy so much in the other chili recipe. Next time I'll reduce the salt and cut back some on some of the tomatoes. This is a good recipe to experiment with and really make your own.

Caramel Apple Pork Chops

So good! I made the recipe exactly as written, but doubled the apple mixture after reading the advice from other reviewers. The sweetness of the apples works wonderfully with the pork. I will definitely be making this recipe again!

Butterscotch Gingerbread Cookies

I made these for Christmas this year and WOW... they are good. I am sure that I'll be making them every year from here on out. I followed the recipe exactly, only making one change. Per the suggestions I added just 3/4 bag of butterscotch chips. It was just the right amount. The sweetness of the butterscotch is fantastic with the spicy ginger flavor of the cookies. These were a huge hit at Christmas. My mother made off with a whole plate full at the end of the day!

Mrs. Sigg's Snickerdoodles

Delicious!! These are so easy to make and so absolutely delicious. This recipe is a keeper. I halved the recipe since there were just two of us and kind of wish I'd made the whole batch-- they were gone in minutes! I followed the advice of others and took the cookies out at 8 minutes and removed them from the baking sheet immediately. After cooling, they were crisp at the edges, chewy in the middle. Perfect! Oh, I also took the advice to only roll the cinnamon-sugar mixture on top of the balls of dough. Good advice. The two cookies that I rolled completely in the cinnamon-sugar were burned a bit on the edges & bottom. Better to just coat the top.

Vegan Brownies

Very tasty! I took the advice of other reviewers and used 1/2 cup oil + mashed 1/2 of a ripe banana instead of the full cup of oil. I also substituted 1 cup freshly brewed coffee for the water. Those were great suggestions-- the brownies turned out wonderfully. This is my first experience with vegan baking, and I think the result was every bit as tasty as "regular" brownies. They were moist and flavorful, slightly gooey, with good texture and a nice appearance. The banana really does add banana flavor to the brownies, but I think that works. My husband described it as being similar to banana bread with a lot of chocolate chips in it! I don't think it had THAT much banana flavor, but it was definitely there and quite nice. I took these brownies to my book club meeting and they were gone in an instant. Two thumbs up. I will make these again.

Apple Betty

YUM!! This is absolutely delicious. I followed the recipe exactly as written with only one change: using 1/2 cup white sugar and 1/2 cup brown sugar, as suggested by other reviewers. That was a good call. The brown sugar gives the dish wonderful flavor. I used Red Delicious apples, only because I happened to have them laying around. They worked fine- definitely a little sweeter than the dish would have been with green apples, but not overpoweringly so. The Apple Betty smells amazing while baking and tastes even better once it's finished. My husband and I polished off the whole thing between the two of us, I'm a little embarassed to say. I might not make this again soon just to spare our waistlines, but that would be the only reason. Great recipe!

Whole Wheat and Honey Pizza Dough

An excellent and very simple pizza dough recipe. I've made this several times now and the whole family has enjoyed it. I make the recipe exactly as written and employ the handy microwave tip for rising (very helpful). It is quick and easy to make and the finished product tastes delicious. This will be a staple in our home.

Rosemary Lemon Grilled Chicken

Easy and delicious recipe. I halved the recipe and didn't bother to use the food processor. Also, I grilled on a grill pan on the stovetop (but will try on the outdoor grill in summer). The dish has a pronounced lemon flavor- not too much, just right. I will make this again.

Coconut Pecan Chicken

This dish was very easy to make and fairly tasty. However, I agree that it needs a little extra "something" to give it more punch. After reading the reviews, I added a pinch of garlic and 1/4 tsp. curry powder to the dry mix before coating the chicken. I also added salt and pepper. The final product had a nice, crunchy texture and wasn't too sweet at all. We liked it quite a bit, but it did seem to need some extra seasoning. I like the idea of this recipe enough that I'll probably continue to experiment with it.

Surprise Banana Cake

I made this recipe exactly as it is written with only one addition, 1/4 tsp. cinnamon. I also made it in a 9 inch square pan, as other reviewers recommended. This cake turned out really nicely! It's somewhat dense and quite moist, a bit of a cross between banana bread and cake (as others have said). It's got a very nice banana taste without being mushy. My husband polished off three pieces at dinner and was nibbling on it again at breakfast, so I think I'll be making this one again. I topped the cake with sifted confectioner's sugar because frosting seemed like it would make the whole thing too sweet. Good recipe!

Barbecued Alaskan Salmon

I halved this recipe because there were just two of us. Also, since it's winter, I grilled the salmon on a grill pan, covering with tin foil when not basting. It's a very easy recipe to prepare- nothing tricky or time consuming about this one. However, I was disappointed that the glaze did not give the salmon more flavor. I could barely taste it in the finished dish, and I had used all the glaze and basted both sides multiple times while grilling. Perhaps this would be better used on salmon fillets instead of steaks and marinated before cooking? I like the idea of this recipe, so I might see if I can make some adjustments to it, but as is-- underwhelming.

Rosemary Chicken with Orange-Maple Glaze

Absolutely delicious and quite easy to prepare. I made the recipe exactly as stated, no substitutions, and it was a winner. My husband loved it. I'll definitely be making this again. I served it over couscous with steamed vegetables on the side-- quick and easy enough for a weeknight meal, but with lots of flavor and a nice presentation.

Healthy Turkey Loaf

I'm not really a big fan of traditional meatloaf, but am always looking for new ways to use ground turkey and thought I'd give this a try. It was really good!My husband loved it, so I'm sure I'll be making it again. After reading the reviews, I doubled the recipe to fit in a loaf pan. I also doubled the amount of bread crumbs to 1 cup and had no problems with the consistency of the loaf. I baked it for one hour and it was nicely cooked through. I only used green bell pepper instead of red and yellow, just because that was what I had on hand. Instead of lemon pepper I added some fresh, minced garlic for extra flavor. Halfway through cooking, I brushed the top of the loaf with pasta sauce. The result was delicious.

Grilled Lemon Chicken

Very quick and easy to prepare and very tasty. I made the recipe exactly as written, but without the peppers (didn't have any on hand). Marinated for about 30 minutes and then grilled on the George Foreman Grill. The result was delicious. I'll definitely be making this again.

Cranberry Sweet Potato Bake

I made this recipe for Thanksgiving dinner and it was a huge hit. It's not overly sweet, like so many other sweet potato recipes. The cranberries give it a bit of tartness that is really refreshing. The granola on top adds really nice texture. All in all, a wonderful taste. I made this recipe exactly as directed, but doubled it for our crowd. It was easy, fairly quick and the results were impressive. I'll definitely be making this one again next year!

Easiest Brownies Ever

These weren't bad! I was trying to find something I could make with the few ingredients I had on hand, and stumbled across this recipe. Are they the best brownies I've ever had in my life? No. But they are very easy to make and taste pretty good. I made mine in a pie dish because others had said the brownies came out too thin in a traditional pan. I cooked them about 10-15 minutes longer and they came out nicely. They taste best warm, I think. So, these were absolutely fine and I have no regrets about making them.
