About this Cook
Stay at home mom to 2 kids, 13 and 8. Between helping at school, volunteering and kids' activities, we're always on the go.
My favorite things to cook
Love good comfort food recipes, such as meatloaf, baked chicken, pork chops, etc. that keep all family members happy. I also like to experiment with new things.
My favorite family cooking traditions
My mom was a great "from scratch" baker, and she never used recipes. It was all in her head. For our birthdays she always made a 4-layer chocolate cake with white cream filling and chocolate icing. Tastes like a fresh home-made ho-ho. We now continue that tradition for birthdays at our house.
My cooking triumphs
1. My amazing Italian wedding soup. I've passed out the recipe bunches of times, and I always have to make a huge batch to pass around to all of the soup fans. 2. My "cowboy beans" - baked beans kicked up a notch with bacon, ground meat, 3 kinds of beans and a home made bbq sauce. Can't show up at a family get together without it.
My cooking tragedies
Since I like to experiment and try new things, there are probably too many to mention. Not sure if they are tragedies so much as they were things that didn't fit into my family's taste.

Ricotta Gnocchi
This rating is for the gnocchi only, as I made my own sauce (although I did add the chunks of fresh provolone to the sauce which was very nice). I drained my ricotta cheese using cheesecloth first, after doing that the flour amount seemed fine. Used the full amount of salt and pepper, and fresh minced garlic instead of dried. The dough was easy to work with and the gnocchi was delicious!

BBQ Pie
This was very good. I added garlic powder and a chopped onion to the ground beef, and added some cheese below topping as well. Like other reviewers, I doubled topping for 9x13 pan. Next time I will try this with cornbread topping.

No-Fuss Chicken
I really liked this one, a definite kid pleaser too. I added minced garlic and poultry seasoning - you could add seasonings to fit your taste - the result is a tasty moist, fall off the bone chicken and yummy gravy
