Peanut Brittle Bars

Oh my these are sooo good! I thought I was going to really screw them up when I did not have the right size pan but I adjusted the recipe accordingly- except for the caramel sauce. It turned out fantastic! Love the crust, peanuts and chocolate caramel combo. Pan is a mess but worth it!!!

Best Chicken Ever

I used 1 cup of cornflake crumbs & 1 cup of cheeze-its crumbs...I did not have enough of the cornflakes. I also drizzled olive oil over the top but I think you could leave out the butter or olive oil & get a nice crunchy result. This is a great recipe to experiemnt with diferent coatings &/or seasonings. The chicken was tenderr & it was sooo easy!

Puttanesca or Kalamata Kwik Sauce

This was too hot. I think I am pretty tolerant of spicy foods but this was just too dog-goned hot! I would cut the pepper flakes to 1/2 tsp. & then it might be good.

Flavorful Beef Stir-Fry

This was not as great as the stars indicate. I used different veggies but my problem was cooking the meat in the sauce. When you dump it al in the pan to cook, the suace clumps up making it to thick. I had to add some beef broth to keep it from burning. I think it would have been better to coook the meat without the sauce, adding the sauce after the meat had cooked. I am surprised that no one else had this problem...unless I was doing somethign wrong. Perhaps cooking at a low temp.? But stir fry is supposed to be at a high temp. So I won't be making this again.

Apple Strudel Muffins

I used some of the suggestions by lizzieshome 1/2 whole wheat & 1/2 reg flour also tried shredding some of the apple amd included the cinnamon and nutmeg. I think it turned out fantastic. The only thing I would do differently would be to include some nuts-at least in the topping.

Wilted Lettuce

I think in order to make this wilted you need to keep it warm. I always cook the bacon on a low setting and then remove the pan from the burner & add the liquids. This recipe is just the mixture of the ingredients for wilted lettuce.

Southern Dill Potato Salad

Grilled Garlic Parmesan Zucchini

I have tried just about every recipe that I can find using zucchini and this one is my favorite. I did this slightly differently after reading the reviews. I made a paste of the garlic & salt to add to the softened butter & pplied it only to the tops. I didn't use fresh parmesan but I think it would've been even better!

Tomatillo Guacamole

This was exactly what I was looking for! I did add 1 clove garlic crushed because I add garlic to just about everything! We keep lots of antacid & breath mints around as a result! LOL Great guacamole with the tomatilla twist!

Blueberry Zucchini Bread

I followedthe advice of others & made a few changes that were good. extra zucchini, subbed 1/2 of flour with wheat & a dash of nutmeg. I also did the topping which really made it to die for--butter, sugar, br. sugar, oatmeal & flour. equal amounts...I think the topping could be improved upon...maybe less butter next time so it is more crumbly. Very good recipe!

My Kid's Favorite Pork Chops

My kids don't care for pork, but I cook it anyway for a change of pace. They loved this recipe! I used good ole Bud-lite & most of a bottle of Sweet Rays Barb-beque. I will definitely make this one again!

Fried Cabbage with Bacon, Onion, and Garlic

I had a small head of cabbage that I had grown in my garden & only 3 slices of bacon, so I cut back on the rest of the ingredients and it did not effect the taste. Awesome! Our family demolished this dish.

Zippy Cucumber Salad

Zesty Broccoli

I used the same ingredients but my method was a bit different. I steam my broccoli, so I did that with 3 garlic cloves diced and mixed into the broccoli with some olive oil. After they were done being steamed, I added some of the crushed red pepper. I really liked this & it is healthier than my usual butter & lemon juice method.

Penne with Garlicky Broccolini

I ended up altering this recipe due to lack of ingredients. I did not have enough fresh garlic, so I added shallots and what garlic I had. I also decided to add tomatoes, not having fresh I chose to use dried tomatoes. I love the flavor of them. I then worried that it would be dry so I used some white wine that I had on hand. We definitely enjoyed it and will have this again with the garlic that I love!

Sweet and Spicy Stir Fry with Chicken and Broccoli

This was easy enough and tasty. I would prefer more sauce to my stir-fry so maybe increasing the sauce ingredients would improve my rating. I added red pepper and carrots because I wanted a variety of veggies.

Pleasant Pork Chops

This is my families favorite way to make pork chops. I have made it twice now and I have not really altered the recipe. I served it with brown rice instead of noodles this time. My one comment is that I did not end up with alot of liquid to reduce..in fact I had to add liquid in it to make it not be so strong.

Ultimate Potato Soup

This is a good potato soup. I added chopped carrots,1 c.chopped ham & 2 cloves garlic to the potato mixture. The step of separating the broth that the potatoes are cooked in was really unnecessary. I used one whole box of the chicken broth..32 oz. I think which ended up being less than the 3 cans. I did not use the chicken boullion--don't like the stuff & I think it worked well without it. I will keep this one with the changes I made.
