Monkey Bread Muffins

Yummy!!! This was perfect for the breakfast get- together that I had to attend! I doubled the recipe & came out with18 muffins. I also toasted some pecans & then added them to the butter & sugar mixture as it was melting. I will keep this one close at hand!!!

Sour Cream Chicken and Potatoes

I rated this recipe a 4 because I had a few complaints about it as written. The taste however was a 5 star! My complaints could be eliminated with some changes in the procedure. LOVED the potatoes! The spinach mixture must be mixed in a food processor- the blender just wouldn't puree- even with some evoo added. I would saute the chicken without the pesto & maybe add it before baking. It burned my pan horribly & probably lost a lot of flavor. I will keep this recipe because I loved the flavor & will experiment with the method of putting it altogether.

Creamed Chipped Beef On Toast

This is absolutely a comfort food! I use the Krogers brand of dried beef in the package, serve over biscuits with either peas or asparagus. I sprinkle hardboiled eggs over the top. YUMM! A familly favorite!

Mad Hatter Salad

I had to make a few adjustments due to lack of ingredients. I used a vidalia onion instead of green onions & pine nuts instead of sunflowers seeds & almonds. It was super even with the adjustments.

World's Best Lasagna

This really was the best lasagna that I have ever made. I have always used a jarred sauce for my lasagna just because it was easy. The difference was huge! I will be serving this for special occasions!

This was fair. I did not taste the lemon at all. I let it sit in the lemon for 10-15 min. prior to grilling & really hoped it would taste lemony but it didn't happen. :(

Sweet, Sticky and Spicy Chicken

Wow this was sooooo good! After reading reviews, I altered the recipe based on a few other reviews--which is why I LOVE this site. I used chicken tenders and cut them into thirds resulting in nice size chunks I then dredged the chicken in flour seasoned with salt. I stir-fried a yellow, red & green pepper and an onion that I had left over in some olive oil, then took them out of the pan & then sauted the chicken pieces. I too used the hot sauce that you can find in the Chinese section of the grocery store- with the rooster on it. I did not have fresh ginger so I subbed 1 hearty tsp. of dried. I thought it was as good if not better than my favorites at our local chinese place. It is spicy, but not too spicy. This one goes in my favorites!!!

Prairie Meat Loaf

This is a fair recipe for meatloaf, not great. It's funny how everyone has an idea of how a meatloaf should be made. The cheese- to me is just an added fat that doesn't help the taste at all. This recipe has a lot of steps that are time consuming & it 's flavor was pretty blah. I did cut it in half because my family is small but I don;t think that should alter the recipe's taste. This just isn't what I am looking for in a meatloaf.

Beth's Spicy Oatmeal Raisin Cookies

This is one of the best oatmeal cookie recipes out there! I actually had to make these twice. The first time I used all butter & my daughter measured the flour & I think she did not fill it all of the way up because they flattened out horribly. I am not sure if this was due to the sub of butter or the possibility that my daughter was measuring. The second time I did not substitute anything except using 1/2 whole wheat flour & half regular and I thought they turned out great. These will be a regular in my recipe box for sure!

Fluffy French Toast

This recipe is definitely a keeper! I too have struggled with soggy bread that has slimy texture. This recipe really prevents that from happening. I added a dash of nutmeg at the end & stirred in between dipping the slices. This really helps the cinnamon distribute evenly on the bread & prevents the flour from settling at the bottom. Try it you will never go back to the old way!

Peanut Brittle Bars

Oh my these are sooo good! I thought I was going to really screw them up when I did not have the right size pan but I adjusted the recipe accordingly- except for the caramel sauce. It turned out fantastic! Love the crust, peanuts and chocolate caramel combo. Pan is a mess but worth it!!!

Best Chicken Ever

I used 1 cup of cornflake crumbs & 1 cup of cheeze-its crumbs...I did not have enough of the cornflakes. I also drizzled olive oil over the top but I think you could leave out the butter or olive oil & get a nice crunchy result. This is a great recipe to experiemnt with diferent coatings &/or seasonings. The chicken was tenderr & it was sooo easy!

Puttanesca or Kalamata Kwik Sauce

This was too hot. I think I am pretty tolerant of spicy foods but this was just too dog-goned hot! I would cut the pepper flakes to 1/2 tsp. & then it might be good.

Flavorful Beef Stir-Fry

This was not as great as the stars indicate. I used different veggies but my problem was cooking the meat in the sauce. When you dump it al in the pan to cook, the suace clumps up making it to thick. I had to add some beef broth to keep it from burning. I think it would have been better to coook the meat without the sauce, adding the sauce after the meat had cooked. I am surprised that no one else had this problem...unless I was doing somethign wrong. Perhaps cooking at a low temp.? But stir fry is supposed to be at a high temp. So I won't be making this again.

Apple Strudel Muffins

I used some of the suggestions by lizzieshome 1/2 whole wheat & 1/2 reg flour also tried shredding some of the apple amd included the cinnamon and nutmeg. I think it turned out fantastic. The only thing I would do differently would be to include some nuts-at least in the topping.
