Curry Pasta Salad
Tastes great.. The first time I made it i used tofu, second time, I used chickpeas-YUM! I feel that the amounts used in the recipe are not enough. I just added more of everything until I liked it. I actually think this tastes better the next day.

Luscious Lima Bean Soup
This recipe is absolutely fabulous. I held off on the carrots. Then stuck the immersion blender in the soup to cream it up then added the carrots till tender.YUMMY!

Moroccan Chicken
I also made a vegan version of this recipe, omitting the chicken and substituting veg broth for the chicken broth. Both were delicious. Served it w/ cous-cous, roasted asparagus, corn and mesclun greens. DELICIOUS AND EASY TO MAKE!
