Jim's Macaroni Salad

Very good recipe but, as other reviewers have noted, on the dry side. I made about 30% more dressing than called for and after a couple of hours in the fridge, it has soaked it all in. Next time, I'll make a double batch of the dressing and keep half on the side for the next day. Dressing is very good with some crushed garlic added in.

Chicken Enchiladas with Creamy Green Chile Sauce

This was a huge hit with my family and guests, very easy to make and really delicious. I'm going to add some heat next time & use fresh jalapeƱos in the sauce as the canned chilies were a bit too mild for me. Great recipe, I will definitely be making this again!

Hamburger Vegetable Soup

As my husband says, this soup is "Wicked Good." He's in the kitchen having seconds right now! I added fresh carrot/potato, used a can of stewed tomatoes, a can of kidney beans, frozen peas/green beans and extra garlic while omitting the pasta. The great thing about this recipe is that you can dress it up or down depending upon your tastes or what you have in the fridge. Very flexible and easy to make! Really a great soup for a cold winter night, thanks so much for sharing it!

Diane's Colcannon

Best colcannon I've ever had! Only changes were I added about 1/4 a cup of stock to the cabbage when cooking it and some minced garlic in addition to the onion. Finally, I didn't have milk, so I used cream with the potatoes. HUGE hit, will be serving again and again!

Caldo de Res (Mexican Beef Soup)

Great recipe, I live in Chicago where we have an abundance of great Mexican restaurants, and my pals all think this is the best they've ever had! I used the beef shank bone, but also added 1lb of finely chopped beef. When I added the stock, I also threw in two cloves of slightly crushed garlic. Instead of using just cold water, I added 2 additional cans of stock, 3 cups water, and two packets of tomato & cilantro Sayzon. I'll be making this again and again!

Crab Quiche
