Jennie's Heavenly Slow Cooker Chicken

My 6 yr old couldn't stop MMMMing during dinner. I used what I had on hand, so subbed reg cream of mushroom soup, plain cream cheese plus dried chives & onion pwdr. Plus used chicken broth for wine. Served this over rice & it will defintely go in the reg rotation.

Costas French Market Doughnuts (Beignets)

this was my first attempt at deep frying anything, so maybe that was the problem? My beignets did not come out puffy. I even tried rolling & let them sit for an hour before frying & still didn't puff up like I wanted. They still tasted good, mostly like a funnel cake. I did notice the yeast seemed to expand in my stomach after eating these. Great recipe to try for Mardi Gras but probably won't be a repeat w/ us.

Golden Carrot Buns

Great way to use up some carrots. My kids loved these & never suspected they were "healthy". I thought these were a little dry but just slathered w/ butter to eat.

Oat Waffles

Delish! I ground my own oats, so there were little bits of oats in the batter, but still good. I added a dash of cinnamon & a dash of nutmeg, so good. Love this topped w/ strawberry syrup & whipped cream.

Country Apple Dumplings

My grandma gave me this recipe years ago & I've been making it ever since. It is delish! You could sub Sprite for the mt. dew but I don't. Perfect cold weather dessert! We've even had leftovers for breakfast the next day.

Fiesta Cheese Rice

This is okay. Not too spicy at all. I used a can of chicken broth in place of the boullion & water & mixed all of the cheese in. Not great to eat w/ a fork, but we found it okay by putting it in our soft tacos. Probably won't make again.

Lemon Poppy Seed Bread

I love quick breads like this, but mine did not turn out well. I subbed lemon juice & lemon peel for the extract. This had hardly any flavor. I checked the tiny 3 loaves at 55 mins & they tested done. But after the glaze & cooling they look & feel like they aren't cooked through. The glaze recipe is way off too. These are going in the trash.

Best Strawberry Daiquiri

This was okay. I used fresh strawberries, def needs more strawberries, 4 oz was barely any. I liked the lemon/lime juice flavor. I might try this again w/ double the berries.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I had a few problems w/ this recipe. I ran out of eggs so didn't make the filling & subbed a jar of lemon curd. the cake was very dense & thin, so I didn't cut these in half, just used them as is & put the curd in the middle & covered all in the frosting. My frosting was too thin & way too much. Not pretty & just okay taste, won't be making again.

Buffalo Chicken Dip

Ummm, no thanks. This was not awesome. Only 2 of the people that I served this to liked it. I used the buffalo chicken recipe from this site & used blue cheese instead of ranch.

Heavenly 'Apple of My Thigh' Dessert

Made this for a large group of ladies & kids, it was a hit! I doubled the recipe, but just eyeballed the toppings. I used mini choc chips & bagged toffee bits. Next time will try the sprite trick for the apples, as the granny smiths were the only ones that didn't turn brown. This will be a regular dish for us as it keeps really well in the fridge.

Raspberry Fudge Brownies

This was good. The serving size was just too small for me. I liked these best after a couple of days in the fridge, the raspberry cream had time to stiffen up & didn't want to slide off the brownie.

Heavenly Potatoes and Ham

Made a couple changes based on reviews, doubled the ham & less potatoes. Not really impressed. there was too much sauce left over on the plate. I'd rather just make my hashbrown casserole & serve ham on the side.

Homefried Potatoes with Garlic and Bacon

Nothing really special about this, but maybe it was the changes I made. I drained the bacon grease & just added a few spoonfuls back in w/ the potatoes. I nuked my spuds for 2 min before slicing. They looked good, but lacked something. Def need more seasoning. Probably won't try this again.

Spanish Rice Bake

Very bland! I followed the recipe except sub salsa for the chile sauce. Plus I covered my rice while it simmered (not sure if it would cook right w/out a cover?). This was okay after we used it like a dip w/ tortilla chips. Won't be making it again:(
