Awesome Carrot Cake with Cream Cheese Frosting
Moist, yes, healthy & nutritous? Not exactly!! Excellent cake and very moist. Followed advice of other reviewers and used only 1/2 the oil, added applesauce, more cinnamon, some allspice, & nutmeg, and drained the pineapple slightly and didn't put in the pecans (used for decoration instead). Baked in two 8" round pans and came out great. Frosting seems fine to me. Will definetly make this again (p.s. tastes even better if sits in the fridge for a day--if you can get it to stick around that long!!)
