Tomato Cucumber Salad
Quick, easy and simple. I used red onion instead (tastes better) and drizzled EVOO (extra virgin olive oil). Squeezed 1/2 lemon juice and added salt & pepper for taste. Goes great with baked pork chops. Thanks for sharing!

Shepherd's Pie V
I did a lot of modification because I didn't have all the ingredients. I used ground chicken instead, only 1 chicken boullion cube and added butter and milk to the mashed potatoes. I also added shredded mozzerella & cheddar cheese on top. That was a great touch! It still turned out really good except, I agree with a few others, it needs some sort of gravy. Next time, I will prepare a gravy to go with it.

Roasted Pork Loin
I cooked a 2.5 lbs roast for 1 hour, 10 min. It was juicy, but I was confused what I was suppose to cook the roast in so I just put it in a baking dish, uncovered. I thought it was too much rosemary, will definitely try it again with less or with another spice.
