We made this for the Super Bowl to serve along with ribs, and it came out great. I used a red onion just because that's our personal preference and added a tiny bit of yellow mustard too. We loved it and will definitely make this one again. The bacon is a great touch!

I made these exactly as is, and they were a big hit. I also made a batch that I added chocolate chips to, and I think that was even better. The baking time was perfect. Got lots of rave reviews at the baby shower I took them to, and my husband loved them as well. They're good as is, and even better topped with a great cream cheese icing. We'll definitely make these again.

I'm making this to bring to Thanksgiving, so just did a little taste test, and wow is it excellent. I doubled the recipe because we have a large family. The only things I didn't double were the sugar and the onions. I only used two onions, and that was perfect. I also added one cup dried cherries along with the cup of dried cranberries, and that combo was delicious. I would definitely make it that way again. I used portobellos for the mushrooms, and it gave the rice a nice, hearty flavor. We'll definitely make this again and again during the fall and winter seasons.
