Slow Cooker Chicken Taco Soup
We loved this one; I was a little worried about the beer, but it gave the soup a great flavor. We didn't bother cooking raw chicken breasts - instead we bought and shredded the meat from two rotisserie chickens so we wouldn't have to wait all day to eat it. We also sauteed the onion in a little olive oil to brown it and soften it up. It was really delicious, and the soup has a little kick to it. We'll definitely make this one again. We topped ours with crushed baked tortilla chips and low-fat sour cream, and it was delicious.

Chewy Peanut Butter Brownies
This is honestly one of the best recipes I've ever found on this site; they turned out wonderfully! I subbed butter for the margarine and added a handful of semi-sweet chocolate chips, and it was great. I made the mistake of leaving them alone with my husband, and now half the pan is gone! Thank you for this wonderful recipe.

Sausage Casserole
We really liked this recipe. The flavors were excellent. It would be a great dish for a brunch or to take to the office. The only thing I might change is to cook the potato crust on its own to get it to crisp up and brown a little bit before adding the rest of the ingredients. I like the idea of using hash browns to save time. We would definitely make this one again.
