Beef Pot Roast

This is definitely a keeper. DH loved it! Added broth, carrots, potatoes and celery. After everything finished cooking, I made a gravy with the juices and poured over the meat and veggies. Comfort food at its best! Next time I'll add mushrooms.

Cheddar Mushroom Potatoes

Followed advice of others to add milk to the soup then to layer soup, cheese and potatoes. This was a bit bland for my taste. May try again later with additional seasonings.

Banana Crumb Muffins

I doubled the recipe and added 1 tsp. of vanilla and macadamia nuts to the batter. This made 2 dozen muffins. They came out perfectly moist and delicious! The streusel topping really makes this unique from other banana muffin recipes. I will definitely make these again and try adding coconut or chocolate chips for a different variation.

Four Cheese Macaroni

WOW - this was very decadent. Made a roux with butter and flour, added 2 cups half/half, doubled the cheese (mild cheddar, jack, 6-cheese Italian mix) except for Velveeta (which I substituted with American cheese) and omitted the eggs. Took another's suggestion of adding fried bacon and onion (doesn't bacon make everything taste better?). Then I topped off with additional cheese and buttered bread crumbs. I think I gained 10 lbs. just eating one helping and my hubby LOVED it!

China Moon Salmon

This recipe works best if it's put into pan without holes and allowed to poach in the juices. The fish absorbs all of the wonderful flavors and you can ladle the sauce over white rice. YUMMY!

Banana Macadamia Nut Bread

This came out great! I added 1/2 cup of sweetened coconut flakes and it was perfect. It was moist with a subtle banana flavor and just sweet enough. Next time I'll reduce the flour to 3 cups due to the bread rising too high.

Roasted Pork Loin

So yummy and full of flavor!! Made the following adjustments for a 4 lb. pork loin: 8 cloves garlic, 3 tablespoons fresh rosemary, 2 tsp. kosher salt, 1/2 tsp. pepper, 1 tsp. dried thyme (didn't have fresh), and enough olive oil to form a paste. I mashed it all up with a mortar and pestle, rubbed it all over the pork and marinated it in a large plastic bag for 3 hours. It took 2.5 hours (165 degrees internal temp) to cook. FANTASTIC!

Real N'awlins Muffuletta

So yummy! Tastes really close to Central Grocer's. I ended up following the recipe exactly and wouldn't change a thing about it - although I doubled it. One recipe isn't enough for two sandwiches. This is one helluva expensive sandwich to make it but well worth it! Thanks, Boo, for an excellent recipe! I had to add that I tried making this again with the homemade bread recipe that someone here posted and it is DIVINE! I will forgo the bakery bread from now on!

Spinach Quiche

First time I made quiche and it came out FANTASTIC! Per other reviewers, I made some changes - recipe in general is way too much for a 9-inch deep-dish store-bought crust so I will make two quiches next time. I used 2/3 cups half and half, 4 oz of feta (they don't sell 6 oz where I am so I opted for less), small Vidalia onion, and reduced the butter to 1 heaping tablespoon. I also put the top layer of cheddar cheese during the last 15 minutes of cook time. Mmmmmm...this was so decadent.

Quiche Lorraine I

This was so YUMMY - a big hit at my Mother's Day brunch. I made alterations based on other commentors. I added 4 eggs, used 1 1/4 half and half, and 8 slices of bacon (love bacon!) and used a Vidalia onion which added a slightly sweet flavor to the quiche. Next time I'll go back to 3 eggs and use 1 cup of half and half because it was too much for my 9-inch store-bought pie crust. Can't wait to make this one again!!!

Coconut Ice Cream

Love this recipe. I don't know how previous reviewers can say that this isn't sweet enough. I made pina colada ice cream by adding a can of well-drained, crushed pineapple towards the end of the freezing process. YUM!!!

Toll House Pie I

Great, EASY recipe. Like the others, I reduced the butter to 1/2 cup. I also microwaved the butter so that it was soft but not melted (instead of melting the whole thing and letting it cool - too much waiting time for me). The texture was perfect! I used a store bought crust which was just okay. I'll make my own next time. Thanks, Janice!

Garlic Prime Rib

Absolutely delicious. I've never been confident making prime rib but this recipe is sooo easy! I took everyone's advice about using a 460 degree oven instead of 500 for the first 20 minutes. I made 2 pieces (6+ and 4+ lbs.). It took a total of 3 1/2 hours to get med-medium rare (took the roast out when internal temp was 145 degrees and let it rest for 30 minutes before carving). YUM!

Chicken Andouille Gumbo

Absolutely yummy and so easy. The only things I changed was: Used 4 large boneless chicken breasts and boiled it in 9 cups of water; used Louisiana hot links instead of andouille based on what my local market had available; decreased fresh okra to 1 lb. and sliced before I sauteed them.
