My 8 year old daughter and I were looking for the perfect recipe for the annual Bake Off and we came across this one. Thought the lemon flavor would be perfect for spring. With a little help from mom my daughter was able to make this with ease. It turned out GREAT! The only problem I had was with my oven. It wanted to cook a little hot so next time I make this I will set the temp a little lower and cook longer. Also like others I used lemon extract instead of vanilla and it has the perfect balance of lemon. I think next time I might leave out lemon peel due to the texture issue. I didn't have a zester so I had to use a grater which made the pieces a little larger and made them a little crunchy. All in all I think it is a wonderful spring recipe and I will definatley be making this again.

This recipe is perfect when you are busy with kids all day. My kids loved it and so did my husband(who is never pleased with my cooking). I used the Cream of Mushroom With Garlic instead of the regular soup. It added a little more flavor to it. I also added potatoes about halfway through to add more of a meal. I will definatly cook this more often.

I thought I would try this recipe on my husband for Valentines Day. He thought it was really good, and that is coming from someone who is a meat-and-potatos kind of guy. I would definatly make this one again.
