Country Apple Dumplings

Best dessert ever! I made it with Mtn Dew the first time but only had 7up the second time. You can use any lemon-lime soda and the result will be the same...a beautiful carmelized dumpling. I sub brown sugar for white and stir the sugar/butter mixture until it gets nice and thick but not foamy. If you let it get too thick, it plops onto the cooking dish instead of covering the top of the dumplings. Stop stirring when it gets nice and thick but still syrupy, like in the photo by Shalaine_1. Yummy

Crispy Black Bean and Shrimp Tacos

I submitted this recipe. These tacos are amaaaaazing! They take a few mins to prep but the end result is delicious! The best part is you can substitute different fillings, cheese, etc., to meet your personal preferences. Enjoy!

Mound Bars

Everyone loved these, even though I didn't put enough butter in the crust and it all fell apart. I also left out the sugar and followed other reviews by pouring the condensed milk over the coconut and using chocolate bars on top. Popped them in the oven for 2 mins and the chocolate melted perfectly.

Crabmeat and Corn Soup

This is super easy and delicious. I used 1% milk and it was perfect. I didnt taste the soy sauce, not sure what its supposed to do. I added some cayanne pepper for a little kick. Great soup.

Excellent and Healthy Cornbread

I made this twice, exactly as directed. At 400 degrees, after 20 minutes I had a dried out brick. The second time I pulled it out after 12 mins and it was definitely more moist but was super dense. Not my fave.

Slow Cooker Chicken and Dumplings

This is so good and so fattening. I only make it when I need serious comfort food. I add onions, carrots, pease and mushrooms and use chicken broth and only one can of biscuits. Oh, and add the biscuits at the end, maybe 1.5 hours before you're done. DELISH!!!

Chicken Honey Nut Stir Fry

This is a perfect stir-fry. I make it all the time but I usually use carrots, zucchini, mushrooms and onions. Don't forget to put the cashews on top or you'll miss the delicious cruch.

Cioppino

This is my absolute favorite recipe on this site. Its a bit expensive because I like to use large shrimp and sea scallops. I usually add more chicken broth because I like a lot of "soup". You can use any type of seafood...this Cioppino is fantastic!

Chinese Cabbage Salad I

Delicious. I toasted the ramen and cashews, added rotisserie chicken from Costco and used a regular head of Napa cabbage. I also heated the dressing on the stove for a minute and then chilled it. This was a fantasic salad.

Better Than Sex Cake II

I'm really surprised that I didn't love this cake because I have a huge sweet tooth. I followed the recipe, except I made my own whip cream. I thought it was way too sweet. It almost made me sick, that's how overly sweet it was. The guys at work ate gobbled it up, so that's something but I doubt I'll make it again.

Szechwan Shrimp

This was fantastic. I doubled everything in the sauce except the chili flakes and I left the ginger out all together (personal preference). I used fresh shrimp, threw them in at the last minute with some sugar snap peas and served over white rice. Absolutely delicious.

Chocolate Brittle Surprise

Ok, I pulled a typical "brooke" and made these the first time on a flat baking sheet without raised edges. DO NOT DO THAT or you will have the caramel sauce all over the bottom of your oven. sigh... Also, make sure to stir your heated butter/sugar mixture for a full 2 mins; it will eventually combine into the thicker caramel consistency. I pour both semi sweet and milk choc chips on mine...delicious. And the cooking time is way too much, 7-10 mins is more like it. THESE ARE DELICIOUS!

Smashed Cauliflower

I would give this four stars, but it needs some tweaking. It was really runny, like cream of wheat or soft polenta. Next time I will use 1.5 to 2 cups of chicken broth and omit the butter all together. Its not necessary. The flavor of the cauliflower and cheese combination makes this taste a lot like mashed potatoes. You could probably trick the kids for sure. I will definitely make again with these changes. NOTE** Ok, I think I figured it out. I used about 1.5c chicken broth, simmered for 15 mins, added 1/3c sour cream, 1c parmesean cheese and 2tbsp butter. I mixed with my hand mixer until I had a blended but slightly chunky (like country smashed potatoes) texture. LOVE IT>
