I made this last night and we loved it. I left out the flour because its not necessary and served with mashed cauliflower and sugar snap peas. Excellent recipe.

Fabulous Fajitas

Great fajita recipe. I've used steak but prefer the chicken. I always add cheese and serve with sour cream and diced tomatoes. Yummmm!

Chicken Honey Nut Stir Fry

Reviewed: Sep. 19, 2009
This is a perfect stir-fry. I make it all the time but I usually use carrots, zucchini, mushrooms and onions. Don't forget to put the cashews on top or you'll miss the delicious cruch.

Cioppino

Reviewed: Sep. 19, 2009
This is my absolute favorite recipe on this site. Its a bit expensive because I like to use large shrimp and sea scallops. I usually add more chicken broth because I like a lot of "soup". You can use any type of seafood...this Cioppino is fantastic!

Excellent. I left out the jalapenos and made a balsamic glaze to drizzle on them and it was perfect.

Fire Roasted Tomato and Feta Pasta with Shrimp

This was soooooo good. I used canned and fresh tomatoes cause I love tomatoes. The feta melts and makes it a creamy dish. Excellent...

Sweet Vidalia Onion Pie

This was very good. I subbed swiss instead of cheddar. Its oily and gooey just like it should be...not a regular part of my diet, but delicious!

Chinese Cabbage Salad I

Reviewed: Sep. 19, 2009
Delicious. I toasted the ramen and cashews, added rotisserie chicken from Costco and used a regular head of Napa cabbage. I also heated the dressing on the stove for a minute and then chilled it. This was a fantasic salad.

Better Than Sex Cake II

Reviewed: Sep. 1, 2009
I'm really surprised that I didn't love this cake because I have a huge sweet tooth. I followed the recipe, except I made my own whip cream. I thought it was way too sweet. It almost made me sick, that's how overly sweet it was. The guys at work ate gobbled it up, so that's something but I doubt I'll make it again.

Whipped Cauliflower

Reviewed: Aug. 28, 2009
Terrible. I've made this a dozen times like this: boil just the florets of the caulifower, drain well, mash and add a little butter and/or parmesan cheese until you get the flavor and consistency you like. Salt & pepper as needed. Its that simple.

I followed others advice and used 2 cans of crab and 2 boxes of mini phillo cups. Everyone loves these and asks for the recipe. Super easy too!

Szechwan Shrimp

Reviewed: Aug. 6, 2009
This was fantastic. I doubled everything in the sauce except the chili flakes and I left the ginger out all together (personal preference). I used fresh shrimp, threw them in at the last minute with some sugar snap peas and served over white rice. Absolutely delicious.

Chocolate Brittle Surprise

Reviewed: Jun. 17, 2009
Ok, I pulled a typical "brooke" and made these the first time on a flat baking sheet without raised edges. DO NOT DO THAT or you will have the caramel sauce all over the bottom of your oven. sigh... Also, make sure to stir your heated butter/sugar mixture for a full 2 mins; it will eventually combine into the thicker caramel consistency. I pour both semi sweet and milk choc chips on mine...delicious. And the cooking time is way too much, 7-10 mins is more like it. THESE ARE DELICIOUS!

Smashed Cauliflower

Reviewed: Feb. 4, 2008
I would give this four stars, but it needs some tweaking. It was really runny, like cream of wheat or soft polenta. Next time I will use 1.5 to 2 cups of chicken broth and omit the butter all together. Its not necessary. The flavor of the cauliflower and cheese combination makes this taste a lot like mashed potatoes. You could probably trick the kids for sure. I will definitely make again with these changes. NOTE** Ok, I think I figured it out. I used about 1.5c chicken broth, simmered for 15 mins, added 1/3c sour cream, 1c parmesean cheese and 2tbsp butter. I mixed with my hand mixer until I had a blended but slightly chunky (like country smashed potatoes) texture. LOVE IT>

Spaghetti Squash I

Reviewed: Dec. 26, 2007
This is a great recipe. I cooked the squash for 50 minutes and had to add A LOT of parmesean cheese to give it flavor, but I really liked pretending it was pasta. Not that great the next day so eat it the first night.

Blaaaaand. I used 2 cans of tomato bisque and some onion soup mix to try and zest things up a little and...nothing. For all the work involved, I expected much better. Won't make again.

Brooke's Best Bombshell Brownies

Reviewed: Jul. 1, 2007
Delicious! These are dense and rich! If you don't like a sweet, fudgy brownie, don't make these. Most of the lower ratings were due to people decreasing the amount of sugar. If you want a 5 star brownie, use all 3c. of sugar. If you want a 3 star recipe, decrease your sugar...its that simple.

These are delish. I make them in the big 6 muffin tin instead of the smaller one. Don't mash the bananas too much, the chunks add a nice consistency.
