Fruit Cobbler

This was a very easy cobbler with basic ingredients that I always have in my kitchen. I used fresh cherries and it was very good. Not the most amazing cobbler I've ever eaten, but good enough that I'd make it again, especially if I just want to whip up a quick dessert.

Chocolate Banana Bread

I followed the recipe exactly as written and it was very good. Both the banana and the cocoa flavors are light and not overpowering.

Chicken Enchiladas V

I did not add the chili powder, but instead added 1 package of taco seasoning mix. This seemed to give it the flavor that it needed (otherwise, it seemed a little bland) My family really enjoyed this EASY dish and I will make it again.

Banana Pudding III

Delicious! The whipped cream made this a very rich and creamy dessert. I used milk instead of water and I also used about 6 bananas. The recipe filled a 9x13" dish. The taste was much better on the day after I made it.

Mock Tuna Salad

I really wanted to like this recipe and with all of the amazing reviews, I expected to love it. However, I didn't care for it at all. It did not taste like tuna, it was dry, and the combination of spicy mustard, sweet relish, and garbanzo beans was not a flavor that anyone in the family liked.

Banana Bread V

To make this a little healthier, I used whole wheat pastry flour instead of all purpose. I also used 3/4 cup of pure maple syrup instead of sugar. It was moist and very filling.

Red Skinned Potato Salad

This was very good. I did, however, make a few substitutions. I did not put celery in it. I also do not like the consistency of onions in potato salad, so I used onion powder, instead. I also used a bag of Hormel real bacon crumbles to save time. I will definitely make this again.

Beefy Baked Ravioli

Baked Chicken Nuggets

These were good, but not a favorite for chicken nuggets. I used whole wheat bread crumbs and used egg instead of butter. VERY salty! The flavor didn't really work for us as nuggets, but I'm giving it 4 stars because I think this would be a great recipe to use when making chicken Parmesan.

E-Z Drop Biscuits

These were very easy to make biscuits. I think I made them in less than 5 minutes (not including cooking time). My toddler loved them, but I thought they were pretty bland. I slapped on quite a bit of butter to make up for the lack of flavor.

Michelle's Soft Sugar Cookies

These are soft, moist, delicious sugar cookies. This is now the recipe that I make for baby/bridal showers, holidays, or just whenever we feel like making cookies at home. They taste great alone, but we prefer them with frosting.

Perfect Pumpkin Pie

This definitely tastes better the day after you bake it. I took a bite while it was almost cool and thought that it was not very good, but by the next day, the pie was sweet with a nice, creamy texture. VERY easy- it didn't even take 5 minutes to mix and prepare the ingredients.

Sweet Dinner Rolls

These were light, slightly sweet yeast rolls that were delicious! I rolled mine into balls instead of making the crescent shapes. I also made cinnamon rolls, which turned out great!

Cream of Pumpkin Soup

I thought the recipe as is was pretty bland, so I made several changes and it turned out much better. I cut the amount of broth in half because I wanted a thicker soup. I used about 2 teaspoons of pumpkin pie spice instead of spices listed as well as an additional tsp cinnamon. I added about 3 TBS of brown sugar to make it sweeter and used whole milk instead of cream. The extra spice and sugar gave it more flavor.

Homesteader Cornbread

Baked Pork Chops I

Very good. I used Healthy Request soup (for less sodium) and Chardonnay. I only used half of the milk and substituted the other half with more wine. I fried and baked exactly as the recipe stated and the chops were very tender.

Kielbasa with Peppers and Potatoes

this was too bland for us, so I added about 1/4 chopped onion and a pinch of garlic powder. i also added a pinch of crushed red pepper to give it some more of a kick. very tasty!

Cafeteria Carrot Souffle

It was good- seems similar to sweet potato casserole. My husband, who doesn't normally like cooked carrots, liked this dish. I used half white sugar and half brown sugar.
