Delicious cheesecake. The first time I made it without reading reviews -- it was delicious, but it cracked, and the texture wasn't quite right. The second time, I followed the AllRecipes suggestions and the cake did not crack and has a nice, smooth texture. I baked for 325 for about 80 minutes, then left for 2 hours in the oven and it is still just a bit soft in the middle (but awesome). HOWEVER, I will never try the water bath again with a spring form pan. I wrapped very carefully and the water still got in around the edges. It doesn't seem to have badly affected the cheesecake, though. I will try using the pan of water on the rack underneath next time. Thanks for "my" new recipe!!
