Greek Pasta Salad I

Loved this recipe! Give it overnight to develop flavors. Used a mix of red wine vinegar and white balsamic (as others had suggested) Was a hit at family gathering...we will make this often!

Truck-Stop Buttermilk Pancakes

This is a keeper, recipe is perfect just as it is. You'll get a nice golden color and perfect pancake consistency! Buttermilk makes all the difference. Yum!

Surprisingly delicious- I was doubtful about the small amount of rice it calls for but it's comes together perfectly. the combo of the sauteed/baked veggies and cheese is great. I added red bell peppers and doubled spices. The next day we added diced jalapenos for extra kick. Great side to serve with any protein- even for the people that don't love zucchini, they will enjoy this.

Margaritas to Die For

Great ratio of ingredients in a fresh lime juice margarita...so much better than limeade! We used a shaker and didn't due to 24 waiting game and they had a nice smooth taste. Also, followed the others suggestion and cut back tequila to 3/4 cup rather than 1 cup...so good! Will do these over again for sure!

Baby Back Ribs

My husband, a rib lover, didn't think this could be done at home without a pressure cooker. This is the recipe, the ribs are absolutely awesome. We do crisp them up on the grill after ovenbaking...soooo good.

Buttermilk Pancakes II

Very fluffy and tasty! Scaled back to 8 servings and still made 10 5-inch pancakes. I made recipe as is, without addition of vanilla and we thought they were very flavorful. Will make again, the next time we are making buttermilk pancakes.

Jet Swirl Pizza Appetizers

So easy and fun. My 3 yr old son, helped me put all the ingredients on the dough. For picky eaters, it's a good way to show them the fun in making food which encourages them to try new things. Such a simple idea, that once you do it you see how many different ways you can change this up and use various fillings in the future.

Slow Cooker Chicken and Dumplings

Although I have had chicken and dumplings before, I haven't ever made it. And this recipe makes it SO EASY to do. You will need to add seasoning to the existing recipe for a nice flavor, I chose celery seed and summer savory. I followed others suggestion by using broth to cover as opposed to water. Also, instead of 2 cans of Crm of mushrm soup, I used one and then used a jar of chicken gravy for the second can. That gave it a super flavor. Only one large can of biscuits needed...and I did allow atleast 1 hr of cooking time for the biscuits. Whole family enjoyed it and we will definitely use this recipe again.

Blueberry Buttermilk Coffeecake

Best coffeecake ever! Followed recipe to a "T". Very moist, fluffy and delicious. Great to serve for a large group since it makes a 13 x 9 pan. Will definitely make this again, probably for family during the holidays!!

Pork Chop Packs

Nice Fall Dish. In addition to slicing the sweet potatoes I added butter, brown sugar and some cinnamon to enhance the apple and potato flavors. EASY CLEAN UP! Cook time was just right. (definitely add the seasoning that you'd prefer other wise this would be too bland)

Pike's Gooey Syrup

Really enjoyed this syrup recipe...only had 2 large red delicious apples, but didn't notice that we were missing anything in the recipe. Really good. Could see how this would be delicious over ice cream or in crepes too. Keeper..for something different once in a while.

Wild Rice and Asparagus Chicken Breasts

I gave this 5 stars because it was so easy and a very good stir fry...it really shows you how easy and versatile that stir fry is to do. You can definitely make this with half the oil..without a problem. Any added veggies you want to throw in for taste or color will add to the dish. I do suggest doing the long grain or brown rice or something that goes well with stir fry as opposed to the wild rice. Yummy!

Chicken Tetrazzini for a Crowd

This was fantastic! I made 2, 9 x 13 casseroles with this recipe. Each pan wasn't completely full but pretty close. One dish was for a family who just had a baby and one was for my own family, of which we ate off of for two meals. I think this recipe is spiced up by how you saute your mushrooms. So do that right and follow the rest of the recipe, of course using whichever cream of soups. It will be a delicious hit. Next time I will probably make 3, 8 x 8 casseroles instead and freeze 2 for future dinners. What a great recipe! Thanks.

Chocolate Lovers' Favorite Cake

We all loved this cake. Made it for my mother-in-law's bday and she raved. We especially like it because it's such a good chocolate cake that needs NO icing on it. What a hit...moist, chocolatey...any chocolate lover will enjoy. And of course, my 2 yr old ate it up too!
