Truck-Stop Buttermilk Pancakes
This is a keeper, recipe is perfect just as it is. You'll get a nice golden color and perfect pancake consistency! Buttermilk makes all the difference. Yum!

Zucchini Herb Casserole
Surprisingly delicious- I was doubtful about the small amount of rice it calls for but it's comes together perfectly. the combo of the sauteed/baked veggies and cheese is great. I added red bell peppers and doubled spices. The next day we added diced jalapenos for extra kick. Great side to serve with any protein- even for the people that don't love zucchini, they will enjoy this.

Margaritas to Die For
Great ratio of ingredients in a fresh lime juice margarita...so much better than limeade! We used a shaker and didn't due to 24 waiting game and they had a nice smooth taste. Also, followed the others suggestion and cut back tequila to 3/4 cup rather than 1 cup...so good! Will do these over again for sure!
