Vegetarian Shepherd's Pie II

Absolutely amazing. Changes: celery instead of walnuts, yeast flakes instead of vegemite, used some potato water in the barley/lentil/veggie mix (with broth concentrate), cooked barley for 10 min before adding lentils (I don't recommend this!), and I took others suggestions to use 3 pans. I've officially decided I'm going to always make extra mashed potatoes so I can make this afterward (and only have to use 2 pots!).

Vegetarian Gravy

Found this recipe forever ago and have been making it for years. I use butter instead of oil and as I make this to go with mashed potatoes I use the potato water in place of broth. I used to make without yeast, but bought it once, and now buy it regularly to add to my veg recipes. Amazing taste. Maybe it's b/c I hadn't eaten gravy in years before I found this, but I swear it's better than any gravy I've had.

Butter Bean Burgers

Really liked these. Made some alterations (more seasonings, more breadcrumbs, no jalepeno), but they turned out well. If you are concerned about flavor, make a small test patty. Try that, and decide if it's good or needs anything. I added red pepper flakes and more garlic after my test run.

Whoopie Pies VIII

Awesome recipe. PA Dutch approved. The cakes were great (not dry at all and nice & chocolate-y); we couldn't stop sniffing the batter, it just smelled so good. The icing was great, too. I made 1/2 a recipe. I didn't use anywhere near as much filling as the photos show, so I had a lot left over. I might have not beaten the egg whites enough or added a bit too much milk/vanilla/shortening vs sugar because our filling was pretty goopy and smooshed out the sides when we ate them, so a quick pop in the freezer or fridge fixed that. Will definitely make again. And again.

Raspberry Chocolate Bars

Has anyone else noticed that the serving size is tiny? You're supposed to divide the 13x9" pan into 48 squares? I've only ever cut that size pan into half that amount of bars.

Veggie Burgers

My bf & I LOVE these! I didn't think they were tasteless at all - we both really enjoyed the taste. I've made these dozens of times by now. I don't follow exact measurements, just add whatever I have on hand (sometimes no summer squash, just carrot & zucchini) and until the mixture forms nice patties. To those of you who's patties are sticky, add more oats; to those who have dry patties, add more veggies. Use common sense - add more or less of whatever you like, and get the consistency right by varying amounts of wet vs dry ingredients. I bread with breadcrumbs instead of flour. I also usually add nutritional yeast & breadcrumbs and sometimes add ground flax & wheat germ to the mixture (can't taste it or tell the difference without, so why not add some additional nutrition?). YUM!

Whoopie Pies I

mmmmmm... Whoopie pies... This recipe was great - the cakes were PERFECT and the icing was really good too. I used one whole egg in the cake & no egg in the icing. So to make up for no egg whites, I added a little milk, which turned out to be too much so I added a little more sugar + some flour. The flour softened the very-sugary taste & I'll probably add flour next time as well. Such a good recipe!

Fabulous Zucchini Grinders

Yum! Be sure to put 1/2 the cheese on the roll 1st (under the zucchini mixture), then the rest of the cheese on top of the zucchini mixture. It prevents the bread from getting soggy. Wonderful recipe! It got the picky SO to eat a veggie that isn't our favorite! I think this would be a hit with most kids, too.

Black Magic Cake

I agree with Cindydraper - it does have a slighty odd, spongy texture. But it does get less noticable after a few days - if it last that long. Despite the texture, the taste was good! I served this cake to a friend on his B-day who doesn't like coffee at all. And he liked the cake & said he wouldn't have known coffee was in it if I hadn't told him. Overall, a good cake, but I was expecting better.

Garlic Butter

Great & super easy recipe. I typically have all ingredients on hand, so I loved that. My only changes were garlic powder instead of salt and basil & oregano in place of italian seasoning. I tried it on angel hair pasta for dinner & used it on butter bread - very garlicy dinner, but delish! Can't wait to make garlic bread! I plan on freezing some in small containers for future use, as well.

Orange Smoothie

Great smoothie! I added heavy cream, which gave it an awesome creamy texture. After tasting how it turned out (so I knew if I'd make it plain) I added peach schnapps. The schnapps overpowered the vanilla taste (I LOVED the vanilla taste) but tasted very good. I'll be making this again! I also tried freezing my OJ in an ice cube tray - makes for an excellent smoothie texture!

Cinnamon Bread Delight

Made one small loaf & 12 muffins. YUMMY! I didn't think they were "plain" tasting - just very simple. Easy to make, and easier to eat :) I sprinkled the muffins with cinnamon & turbinado sugar (the coarse grained brown sugar) - looks great & gives a nice texture on the tops.

Best Marinara Sauce Yet

Very good sauce. I added some brown sugar to counter the tang from the tomatoes & wine. It did seem like it was missing something, though. I may add a touch of chili powder or some fresh herbs next time to adjust the flavor. But it was still very good.

Pumpkin Cake III

VERY yummy cake. Super soft, but a bit too much oil. I'll try replacing half the oil with applesauce next time. The cake was excellent anyway. I frosted using a vanilla frosting (as the b/f doesn't like cream cheese) & that was yummy, too. But I left half unfrosted, as it was so good plain.

B and L's Strawberry Smoothie

Awesome smoothie. I made it with ice cubes the first time, & found I prefer to just use frozen fruit & no ice. It's great with raspberries added in, too. I noticed one reviewer said it doesn't need sugar - I found I definately needed to add the sugar - the plain yogurt makes it too tart for me otherwise. Amazing smoothie - it's a wonderfully yummy way to make sure I get fruit in my diet. Thanks girls!!!

Minestrone Soup

I think this is a very good soup. I used shell pasta, and it needed to cook for longer to be done (20-30 minutes), & I made a few subs (less carrots, 1/2 the zucchini & a LOT less cabbage) & found the subs worked perfect. NOTE: It was very thick even though I left out a lot of veggies, so unless you're planning for more of a stew, have extra broth on hand in case. Thanks for an easy recipe that was yummy!

Tofu 'Fish' Fillet Sandwiches

I was really unimpressed by this. The tofu just doesn't "crisp" up at all. The breadcrumb mixture didn't stick well to the tofu after baking (fell off in places). In the end, all I tasted was breadcrumbs and the tartar sauce (with the tofu giving a very odd, squishy texture to it all). I'm sure this would be decent if you enjoy tofu, but this is just cementing the idea that tofu is NOT for me...

Baked Potato

Thanks for the simple step-by-step approach. You can wrap in foil, cover with oil/salt/pepper, as well. Use your common sense. It is implied that the potato is 'medium' size, not tiny or the world's largest.

Sarah's Applesauce

This applesauce was just awesome. Very easy to make. The smell of it cooking is wonderful. I love it warm (heavenly!) and my SO likes it cold - but its excellent both ways!
