Basil Tomato Soup

I recently have had to eliminate wheat/gluten from my diet. I was dismayed to find my favorite classic brand of tomato soup is now off limits, and I feared I'd never taste this delicious comfort food again. So I tried this recipe, and holy smokes, is it out of this world!! (Dare I say tastier than my forbidden old favorite from a can??) Delicious indeed, and I am so comforted that I can safely have the taste of tomato soup again. With a grilled cheese on gluten-free bread, my tastebuds were happy and my craving was finally satisfied. (I made a few minor changes, but not enough to warrant this an invalid review: Sauteed a little garlic and onion in the pot with 2 Tbsp butter first, then added the tomatoes and broth as directed. Used 1 c. whole milk (instead of cream) and only 2 Tbsp butter for the final step. I probably added extra basil, too, but that's just because I'm a basil nut and the leaves were big. :-) Was extra tasty with a dollop of sour cream I found in the fridge! Thank you so much for this recipe! It is a KEEPER!

Meatloaf with Fried Onions and Ranch Seasoning

MMMMm! Didn't have the stuffing, so I lightly crushed some crutons instead. Also used less fried onions (maybe just 1/3 of the can). Threw in a little worcestershire sauce and BBQ sauce because I had it. Delicious!!! Definitely a keeper.

Potato Chip Cookies V

I've never had cookies made with potato chips before, so I didn't know how finely to crush the chips. I crushed them rather finely, and they turned out all right. Next time I think I won't crush them quite as much because it may improve the texture. These cookies tasted great - buttery and sweet, with just a touch of walnut flavor. I also like that they don't flatten out as they bake!
