Mini Pineapple Upside-Down Cakes
These are extremely yummy and are a very "cute" dessert - great for entertaining. You don't need to trim the pineapple rings - just push them down so they slope slightly up the sides of the cup. You can also put the cherry in the middle before you pour the batter on top. It makes the whole recipe even easier!

Apple Coleslaw
I skipped the pineapple juice (didn't have any), put about half the pepper in and added an extra TB or so of mayo. After those slight modifications, it came out great - very light and slightly sweet. I ate mine on BBQ beef sandwiches and it added JUST the right touch. Delicious!

Kielbasa Stew
This is a great way to use up leftover cabbage. I added carrots and potatoes as recommended by other reviews. It was very tasty and quite filling. I forgot to put the sour cream in and it was still great! Next time I think I'll use turkey kielbasa to make it a little healthier.
