Sweet Potato, Carrot, Apple, and Red Lentil Soup

I followed the recipe exactly. I found it to be very tasty but too sweet. If I made it again, I might omit the apple, or replace one of the sweet potatoes with a regular potato.

Peanut Butter Oatmeal Cookies

I used 2 whole eggs instead of just egg whites.. and rolled oats (not quick cooking). I used Adams natural peanut butter. I added 1 cup of dried currants, and 1/2 cup chocolate chips. I also used whole wheat pastry flour instead of white. They turned out amazing.. my husband is very pleased, and I gave a few to friends who enjoyed them also. Next time, I am going to cut the brown sugar in half.

Charley's Slow Cooker Mexican Style Meat

We're generally not big meat-eaters, but I'm a sucker for spicy shredded beef. This was delicious. I used chipotle-pepper hot sauce (about half as much as the recipe called for) and added a little cumin, did not brown the roast first. After I shredded it, I cooked it for another hour.

Never Fail Applesauce Spice Cake

This was good. I replaced half the white flour with whole wheat pastry flour (you'd NEVER know). I cut down the sugar in the cake by 3/4 cup, and cut the frosting sugar in half. It was still plenty sweet for our taste. I was too lazy to put the pecans in the frosting but I'm sure that would have been good. Next time I'm going to slightly increase all of the spices.

Ratatouille Bake

This is good. The eggplant in mine was slightly undercooked. Next time, I might just add more zucchini and omit the eggplant. It could use a bit of zing, maybe next time I'll add 1/4 tsp red pepper flakes. I would also sprinkle parmesan cheese on top.

Washabinaros Chili

The wasabi taste was REALLY overpowering.. Like, to the point where my husband and I who never waste food, had to throw the entire pot out. I guess you have to be a wasabi lover to enjoy this recipe. I spent about $30 making this chili and I suspect that without the wasabi, it would have been at least edible, if not down right good. But alas, I have to give it one star.

Fresh Fig Cookies

SO GOOD! The spices are incredible tasting! The dough by itself was so good I couldn't stop eating it. Once I added the figs to the dough it was a little sticky and difficult to deal with, but the cookies turned out delicious and were very well received!

Russian Mushroom and Potato Soup

Added celery and didn't peel the (red) potato's (we love skins). Pureed about 1/4 of the soup before adding the mushrooms. Otherwise, followed the recipe exactly. DELICIOUS! Next time, and there WILL be a next time, I will try to cut down on the butter where I feel it's not needed. I also might replace some of the half and half with yogurt or sour cream.

Grilled Cheese Sandwich

My ultimate grilled cheese sandwich is a slice of Tillamook Sharp cheddar between two slices of Dave's Killer Bread (if I didn't have Dave's, I'd use another hearty, nutty or seedy whole wheat bread). I spread unsalted, organic butter on the outside of the slices and sprinkle them with garlic powder. If I have any tomatoes in my garden, I will throw in a few slices. I serve it up with some high quality tomato soup (such as Imagine fire roasted tomato bisque). It's so easy, and so delicious.

Black Bean Tortilla Casserole

This was really good, my husband and I LOVE them. It's a good way to use up a lot of the tomatoes from my garden (I didn't use any canned ingredients). I only added 1/4 cup picante sauce, the rest regular taco sauce. That was plenty spicy for me! I omitted the onions since I don't like them. I added corn.
