Kingman's Vegan Zucchini Bread

This is the best zucchini bread I have ever made, even before I gave up all animal products. I used whole wheat pastry flour instead of all-purpose. I also added a dash of almond extract, cloves, and fresh nutmeg. Next time I will use about 2/3 the amount of sugar called for, as it was too sweet for me.

Lentil and Sausage Soup

Being a VEGAN, I used Field Roast Chipotle Mexican vegan sausage (SPICY and sooooooo good) and "no-chik'n" broth. Cooked it in the slow cooker (took quite a bit longer though). My husband LOVES it. This will definitely be a staple throughout winter!

Vegetarian Chickpea Sandwich Filling

I added a lot to this recipe.. added 1 tsp mustard, 1 extra T mayo, 1/2t curry powder, 2T organic sweet relish, and a pinch of paprika. Also added some raisins. Was absolutely AMAZING. Served on toasted whole-wheat bread, but would be excellent on pita bread. UPDATE: After sitting in the fridge for a couple of days, it tastes even BETTER.

Zucchini Patties

These are delicious. With all the salt in the cheese, no additional is needed. I've made it with or without onion, it is optional. I usually add fresh herbs from my garden such as basil, parsley, oregano, and dill. My husband absolutely LOVES these things. I like to serve them with lightly steamed veggies (whatever in my garden is ready to eat), and sometimes rosemary red potatoes.

Tasty Lentil Tacos

This is absolutely replacing all other taco fillings for me. So delicious, and healthy! Very delicious with crunchy shells, and I'm sure they would be tasty with soft flour shells as well. Both my parents and my husband love these!

Seminary Muffins

Absolutely a five star recipe. I substituted 1/2 of the white flour for whole wheat pastry flour, and substituted 1/2 of the oats for wheat germ and flax. I also added 1/2 teaspoon almond extract. These are incredibly moist and delicious, and they do not taste low fat at all!

Mushroom Soup Without Cream

This is some tasty soup! I dislike the texture of onions, so I minced it and then cooked as directed. I added some hulled hemp seed for a nutrition boost and some wild rice blend for added texture.

Garlic Vegetable Soup

Tasty soup. I used a full head of cabbage. Used whole-wheat macaroni spirals. My husband really likes this soup, and generally he doesn't request soup. The flavor of this soup is even more amazing after a day or two in the fridge. I served it with some Irish Brown Bread.

Whole Wheat Sweet Potato Muffins

These are delicious.. sooo moist! I used whole wheat pastry flour, which I prefer over regular. I used plain yogurt instead of vanilla. Next time I will cut the topping to about 1/3 the amount, and go easy on the honey, as they were a little sweet for my taste.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I followed the recipe exactly. I found it to be very tasty but too sweet. If I made it again, I might omit the apple, or replace one of the sweet potatoes with a regular potato.

Peanut Butter Oatmeal Cookies

I used 2 whole eggs instead of just egg whites.. and rolled oats (not quick cooking). I used Adams natural peanut butter. I added 1 cup of dried currants, and 1/2 cup chocolate chips. I also used whole wheat pastry flour instead of white. They turned out amazing.. my husband is very pleased, and I gave a few to friends who enjoyed them also. Next time, I am going to cut the brown sugar in half.

Charley's Slow Cooker Mexican Style Meat

We're generally not big meat-eaters, but I'm a sucker for spicy shredded beef. This was delicious. I used chipotle-pepper hot sauce (about half as much as the recipe called for) and added a little cumin, did not brown the roast first. After I shredded it, I cooked it for another hour.

Never Fail Applesauce Spice Cake

This was good. I replaced half the white flour with whole wheat pastry flour (you'd NEVER know). I cut down the sugar in the cake by 3/4 cup, and cut the frosting sugar in half. It was still plenty sweet for our taste. I was too lazy to put the pecans in the frosting but I'm sure that would have been good. Next time I'm going to slightly increase all of the spices.

Ratatouille Bake

This is good. The eggplant in mine was slightly undercooked. Next time, I might just add more zucchini and omit the eggplant. It could use a bit of zing, maybe next time I'll add 1/4 tsp red pepper flakes. I would also sprinkle parmesan cheese on top.
