I really appreciate uncomplicated recipes that combine well rounded good nutrition and ingredients with excellent flavor. I enjoy making one dish meals so I don't have to worry about side dishes. I have a husband who is not picky and almost always enjoys what I make. When I'm not looking to All Recipes for my recipes, I turn to my collection of Jeanne Lemlin (who is a rockstar) cookbooks. Over the last few years I have become more and more interested in growing my own foods. First year it was herbs, then tomatoes and herbs. This year it was herbs, tomatoes, squash, blueberries, 2 native berry bushes, corn, and 5 different types of fruit trees (dwarf, because I don't have much room!)! I am trying to overcome my black thumb - some things die or don't produce, but I still keep trying.
My favorite things to cook
I love Indian, Italian, African, Mexican, garlicky Mediterranean dishes, and anything with lots of spice! Almost everything I make is vegetarian. I also love a good veggie burger, and have a weakness for cheese and anything rich & sweet!
My favorite family cooking traditions
My dad makes really good mashed potatoes, but we don't really have any cooking traditions.
My cooking triumphs
My meat-loving husband requests me to make my "mock meatloaf" more than any other food. We use it to make delicious sandwiches. Wow, he's being healthy and sustainable without even realizing it!
My cooking tragedies
I started a fire in my toaster oven when I was broiling portobella mushrooms to make "Portobella Burgers" from this site. I was able to save the mushrooms, however, and they burgers were delicious.

Charley's Slow Cooker Mexican Style Meat
We're generally not big meat-eaters, but I'm a sucker for spicy shredded beef. This was delicious. I used chipotle-pepper hot sauce and added a little cumin, did not brown the roast first.

Never Fail Applesauce Spice Cake
This was good. I replaced half the white flour with whole wheat pastry flour (you'd NEVER know). I cut down the sugar in the cake by 3/4 cup, and cut the frosting sugar in half. It was still plenty sweet for our taste. I was too lazy to put the pecans in the frosting but I'm sure that would have been good. Next time I'm going to slightly increase all of the spices.

Ratatouille Bake
This is good. The eggplant in mine was slightly undercooked. Next time, I might just add more zucchini and omit the eggplant. It could use a bit of zing, maybe next time I'll add 1/4 tsp red pepper flakes. I would also sprinkle parmesan cheese on top.
