Kicked Up Mac and Cheese

This was a really good alternative to the regular mac and cheese recipes. I did as other reviews suggested and added more noodles (about 3 cups) and followed the recipe as stated. I did omitt the bread crumbs. I did follow another reviewers suggestion and added a pound of ground beef cooked with onion, garlic, and seasoning salt. Combined the beef, macaroni, and cheese sauce in a casserole dish, sprinkled the rest of the pepper jack cheese on top and baked for about 20 min. This took me about the same about of time to cook some hambuger helper, and it was much tastier. I will be adding this onto my quick weekdays meal list.

Ham and Swiss Stromboli

What an easy and great tasting sandwich. I made Jay's Signature Pizza dough and rolled it out in a big rectangle. I layered the swiss chesse, ham, sauteed onion and garlic, and then the bacon. Did the loaf in a quick braid style and cooked until golden brown. It was so yummy we ate the whole thing in one evening!

Spicy Bean Salsa

This is the most requested dip for any gathering. Be careful with the garlic salt because the dressing has plenty. Also the addition of cilantro is a must. Serve with tortilla chips.

Quick and Easy Chicken Noodle Soup

This soup was perfect!! Even my picky 2 year old goobled it down. I did cook my chicken in the crockpot with lots of pepper, garlic powder, and onion powder and some water, and then added the left over broth from the crockpot to the soup to cut down on some of the canned chicken broth. I will be making this often!

Absolutely Fabulous Greek/House Dressing

I did scale this down to 12 servings. It was good but not my favorite dressing recipe. But some it could be I followed others advice and cut down on the red vingar. It also seemed to be really heavy with the oregano, and basil. So I am going to play around with the amount of spices and the vinegar. I think this would be great on a salad with lots of feta cheese, purple onion, and black olives. So I am going to give it another try.

Brownie Torte

This was amazing. I couldn't believe that I actually cooked something so decant, that really was little effort. I did follow another reviewers advice and gave the batter a stir about 10 min. after it was placed in the oven. The whole cake was so moist. Do not skip out on the glaze, that is what gives the cake another level of richness. This was the perfect ending to our romantic Valentines dinner.

Cajun Chicken Pasta

Wow this was so good!! I did change a few things.... added a whole onion, used all red peppers, doubled the sauce, and added cayenne to the sauce. I did cook the chicken in the pan and then removed it the oven to finish cooking. Then I sauteed the veggies, with a little butter and fresh garlic. I removed the veggies to a bowl and then started the sauce. I did make the sauce more in an alfredo style. Used half a stick of butter, added the cream, spices, and parmesean cheese. Then I tossed the veggies, and chicken back in to simmer for about 5 min. It isn't easy on calories but is worth it for a special occasion meal with a gourmet taste.

Swiss Chicken Casserole I

This is such a quick and easy casserole for those weekday meals. I layer chicken, swiss cheese, ham (if I have it), cream of mushroom soup, and then the chicken stuffing with the butter. Then make a quick side of veggies and you have a fast dinner with little prep.

Chicken Enchilada Soup I

This was a really easy and tasty soup. To save some time I did cook my chicken breast in the crockpot with some taco seasoning and then prepared the rest of the recipe as stated. I did add some cumin, frozen corn, and toped each bowl with some green onions, and sour cream. This gave it a true "enchilada" taste. I will make this again espically since it was so quick to prepare.

Beef and Biscuit

Wow I was really impressed with the outcome of this recipe. I cooked the beef mixture as directed but added some cumin, fresh garlic, and salsa. I omitted the eggs and had no problem with the mixture being to runny. Though I did have some problems wtih the crust. I precooked the biscuits as suggested but then it took so long for the top layer to cook that the bottom layer over cooked and became really hard. So to solve this problem I think next time I will layer the biscuits in a "pie crust" fashion and precook. Then layer the meat mixture and add the cheese layer at the end of cooking and garnish with some green onions and sour cream. This had a good flavor, and was a quick meal for a weeknight dinner.

Philly Cheesesteak Sandwich with Garlic Mayo

Followed others suggestions and used sirloin for the meat and red bell pepper, with mushrooms. The garlic mayo is the hit of the sandwich. Do not skip this step or you will be missing out!!

Wow these were great! Not only were they easy but they were so light and had a great texture. Very impressed. If you make these just be sure to give yourself enough time for the bread machine.

Mini Ham And Cheese Rolls

I have to admitt I was a little skeptical about the butter and mustard, but these were the hit of the football party. The flavors once baked were awesome together. I used fresh onion and omitted the poppy seeds. I did half cheddar and half swiss and the swiss are by far the best!

This was my first attempt at homemade biscuits and they turned out great. I did follow CookieClaries advice and this really helped me alot on the preparation. I don't think I will ever go back to store bought biscuits with my sasauge gravy.

Sausage Jalapeno Poppers

Everyone loved these! However I did follow others advice 1)use a melon ball scooper, makes it so easy 2) scoop out under running water 3) putting honey on the bacon is a must!! It gave it that great spicy/sweet flavor. If you have convection cooking it cooked the bacon wonderfully. I think next time I will put in more cream cheese or some sharp cheddar.

Quick and Easy Home Fries

These were really quick and easy. They cooked up perfect! I did however use canola oil in place of the butter, and used a whole onion. Added lots of pepper, onion powder, and garlic salt.
