Very Simple Spelt Bread

What a great recipe! I've tried several wheat-alternative breads and they've all fallen short of the mark. This bread was moist and delicious, not to mention easy! Like several other reviewers, I substituted rice milk for regular milk and it was still fabulous. This is a keeper. I've made it every week for the past three weeks, it's THAT good.

Oh my gosh, this is amazing! The raisins are a must, as are the pine nuts. This was absolutely delicious and I will definitely be making it again soon.

Taco Seasoning I

This seasoning is great! It allows me to make my tacos taste delicious while controlling what goes into it. It's great for those of us who are sensitive to some of the preservatives that go into standard taco mixes.

Baked Kale Chips

I love these! They're quick and easy, and very tasty. I snack on them while everyone else is eating chips and popcorn and it takes care of my "need to crunch something." I make these kale chips all the time now. Thanks for a great recipe!

Sauteed Swiss Chard with Parmesan Cheese

Oh my goodness, was this amazing! I've never had Swiss chard before, but I've always ben curious to try it since I always see it at the supermarket. I'm so glad that I gave it a shot! I used rainbow chard for this recipe, and not only was it delicious, but it was very attractive, too. I recommend this recipe! I followed it exactly and was very pleased with the result.

Kickin' Collard Greens

MMMM.... this was so good! I used turkey bacon instead or regular bacon and I used low sodium chicken broth. I think I may have gone a little overboard with the cayenne and red pepper flakes because the collards came out pretty spicy! However, they had a great flavor. I even got my husband to eat one tiny piece! This was delicious and I plan to make it again.

Moussaka

Amazing! Be aware that this recipe is a lot of work. I had a lot of balls in the air while I made this one, but my hard work paid off and it was delicious. The moussaka was a little runny at first, but after it sat for a while (maybe 30 minutes) it cohered to itself a little better. I cut the leftovers into big pieces and froze them individually to bring to work for lunches. They defrosted and reheated beautifully!

Baked Buffalo Wings

My husband and I didn't love these. Although they were nice and crunchy on the outside, they were kind of mushy on the inside. Others may like moist chicken wings. I may be a rarity because I think I like them kind of dry inside. But, this is a nice switch from fried wings and the flavor was nice.

Lentil and Green Collard Soup

This is absolutely delicious! I was a little leery of the cinnamon and cumin, but they were great together in this soup. The lemon juice is a must - don't forget to add some at the end! I didn't find it to be too salty at all and I'm usually sensitive to sodium. I followed previous reviewers' advice and sauteed the onion with half the garlic and sauteeed the collard greens with the other half of the garlic. Make sure you cook the collards thoroughly - they can sometimes be a little tough if undercooked. I found that this made a little more than 4 servings. I filled up 4 leftover Chinese food pint containers and froze two of them. I plan to take them for lunch to work. This is a cheap, nutritious, and delicious soup. Thanks so much for sharing it!

Iced Mocha Latte

This was my first attempt at making an iced mocha lette and I am pleased with the result. I enjoy the little dash of cinnamon that the recipe lists as "optional" and I think it adds to the taste. I used generic Stop & Shop instant coffee rather than Tasters Choice simply because of the price difference, and I'm still very happy with the result. I could drink these alllll day! Very quick and easy, too! YUM!!!

Blackened Chicken

This was so delicious! It has a lot of zip to it. I followed another reviewer's suggestion and pan fried it over medium-high heat for about 6 minutes on both sides and let it rest for 10 minutes afterward. I never put it in the oven at all. It was moist and yummy! I will definitely make this again.

Chinese Chicken Fried Rice II

Very tasty and very simple to make. I probably added more soy sauce than the recipe called for... maybe 4 tablespoons instead of only 2. Also, I forgot to make rice beforehand, so I put freshly made rice in the freezer for an hour to chill it and it worked out just fine. This was a hit with the hubby and I will definitely make it again!

Easy Snack Wraps

Very, very good and quick to make. I omitted the tomato because I plan to make these the day before a big party. As several other reviewers suggested, I added powdered salad dressing to the cream cheese to give it a little more flavor. I'm planning to make a set of ham wraps with powdered Italian dressing, a turkey set using powdered ranch, and a roast beed set using powdered French onion dressing. I also found it useful to spread the cream cheese mix on the entirel tortilla, but only layer the other ingredients on half of the tortilla. When I rolled it up (beginning with the turkey side) the wrap stayed glued shut.

Indian Saffron Rice

For some reason, I've never been able to make rice. The consistency is always too watery or too smushy. I followed this recipe to a "T" and FINALLY I made rice that was palatable. This recipe will now be my go-to rice recipe, although it's a little on the bland side. It's a good overall recipe for saffron rice. Definitely a keeper for those of us who are rice-challenged. My husband asked for seconds! (very rare...)

Fruit Salad in Seconds

This is such a simple recipe that I had my doubts as to how amazing it could possibly be. Boy, were my doubts unfounded! I omitted the grapes because I didn't want to have to slice them in half, and I substituted blueberries instead. This was so delicious and refreshing. It's so simple, but it tastes so special. Delicious!

Chicken Tikka Masala

Wow! I never knew I could cook like that! I followed others' suggestions and cut the salt back to 1 teaspoon for both the marinade and the sauce. It was still a little salty for my taste, so I will reduce it further the next time I make this, which will be soon! I did have some trouble with the skewers sticking to the grill grate, so be sure to thoroughly oil your grills first. I also used half and half instead of heavy cream because I had the half and half lying around anyway. I used more cayenne pepper instead of the jalapeno in the sauce, too. Still, this had just the right amount of heat and was absolutely delicious. Thanks for a keeper!

Delicious! I grilled them outside while the chicken tikka masala was grilling at the same time. The timing worked out great and the naan was superb. (I substituted yogurt for the milk as one reviewer suggested. Great idea!)
