Crispy Fish
This turned out fabulously. Better than eating at a restaurant for sure. The only things I changed were that I used Panko bread crumbs in place of potato flakes (didn't have them) and used regular vegetable oil to fry. I plan to try Grapeseed oil another time. Also left out cayenne since we are spice wimps.

Chinese Chicken Fried Rice II
I used short grain brown rice and this did not seem to be a problem when used still warm. I also add peas and sesame oil. I sauteed green onions and this seems like a neat trick because I don't think my kids will detect them.

Best Lactose Free Blueberry Muffins
These are amazing. For my taste I added just under a cup of sugar, could probably use even a bit less. They are plenty sweet. I also used whole wheat pastry flour and frozen blueberries and they both worked fine. I think the lime juice really sets these apart from other muffins. I also used real butter but will try Earth's best substitute next time.
