Pasta with Greens N Beans
I have made this for years. It needs a little olive oil mixed into the drained pasta. Ziti is my pasta of choice. You can uses the fake soy sausage and nobody will know. Kale, chard, or any soft green leafy veg. will work. Sun dried tomatoes in oil are a nice touch. Instead of the parmesan, I sprinkle soft goat cheese or crumpled feta in at the end and toss. Yum!

Easy Morning Glory Muffins
Truly delicious. Only gave it 4 stars because they did not rise. Muffins were flat. Other recipes rise nicely. Made several batches with same results.

Carrot Cake III
This is the BEST carrot cake I have ever made. My husband doesn't like carrot cake and he LOVED this! Thank you Tammy! Followed advise of others. Decreased oil amount to 3/4 cup and added 1/2 cup applesauce. Used 1 cup white and 1 cup brown sugar. Added 3/4 cup golden raisins. Decreased 10X sugar to 2 cups and still had leftover frosting. Used parchment paper on bottom of 13X9 pan -- a must to remove cake without breaking. Used glass pan so I lowered oven temp to 325* and baked about 45 minutes. After cooling cake for 10 minutes, put cooling rack on top of cake and turned cake out onto rack. Cool. Turn over again onto hard surface to frost and cut into pieces. Use spatula to lift pieces onto serving plate. You can then throw away parchment paper. No mess.
