Fabulous Wet Burritos

My husband rejects almost any " mexican " dishes. This even includes "GASP " enchiladas which are my favoriteHowever he loves this recipe!! the only change I make is to add the fresh veggies on top after baking. I have made this following the recipie and I have made it using "charlies slow cooked mexican beef" instead of ground beef. Come on folks give the lady a break. the recipe is sound enough to play with and still not mees it up. ( if you can cook...) Thanks Sydney for giving me a way to please my husband and kids as well as myself!

PLEASE condensed tomato soup has a completely different flavor than pizza sauce, tomato sauce or any other sauce containing tomato.

High Temperature Eye-of-Round Roast

I was so suprised to end up with a perfectly med rare to med cut of beef that WAS tender. I followed the recipie RUBBING plenty off salt and pepper into the roast before putting it into the oven. The key is to 1 follow the directions. 2 slice as thinly as possible against the grain. 3 either serve with a flavorful sauce or serve on a sandwich w/ ajus. I was very happy w/ the result. Thank you for simplicity and taste

Italian Style Beef Sandwiches

I used fresh peppers but otherwise followed the recipe. I thought it was great but my husband liked it better the next day when I turned it into bbq sandwiches by just adding a bottle of bbq sauce.

Taqueria Style Tacos - Carne Asada

oh my how tasty! I was looking for a good carne asada for the grill so I made this one suit my needs. I did everything as instructed except I grilled my flank steak. I also boiled and recuced the marinade and after slicing my medium rare steak on a bias and against the grain I tossed in the sauce. Sooooo yummy. After reading reviews I almost didnt make the roasted veggie salsa but I am so glad I did. The only thing different I did to prepare it was drizzle with evoo and season with s/p before roasting. I really think this could be a great basting for grilled shrimp or chicken. It was great . Thanks!

Chicken Pot Pie VI

this was a real husband and child pleaser thanks. I had to use 2 cans of cream of chicken soup and canned mushrooms because that was all I had and it still turned out great. I will make individual pie next time though because the filling tends to run out when you cut into it.

Charley's Slow Cooker Mexican Style Meat

this was sooo good. I made it into enchiladas buy adding a can of tomatoes and tom paste to the sauce after removing and shredding the beef. This made the best enchilada sauce I ever had. My husband even gave the finished dish five stars and he is tough to impress. I have tons of leftover meat and cant wait to pull it out of the freezer for a quick meal when I am short on time. Thanks! Oh I cut the amount of hot sauce and used half a small can jdiced jalopenos because that was all I had in the house.

this turned out great for my scrapbooking party. After reading the reviews I substituted velveeta for cheddar and had no problems with grease. I also poached and shredded my own chicken. ThaNKS IT WAS A HIT.

Beef Tips

I used low sodium soy sauce and had no trouble with the salt also only added 1/2 cup COOL water at the end with the gravy mix. This is important if you want it to thicken nicely. Also added some mushrooms and cooked it in the crockpot after pan searing the meat. Excellent dish. Thanks.
