About this Cook
My favorite things to cook
I love baking more than cooking. I enjoy brunch type dishes - casseroles, french toasts and always desserts!
My favorite family cooking traditions
Growing up my mom and I would always bake cookies for our neighbors. Not just one or two kinds but 10 or so varieties. We had macaroons, mint brownies, clothes pin cookies, sugar cookies, lemon or lime bars, turtle bars, and I can't remember the rest of them but those above were the staples every year. She baked til she filled the garage full of all her tupperware bins. As my kids get older I want to carry on that tradition with them. Right now they are in the eating all the dough stage :)
My cooking tragedies
Funny I am starting here - I guess the bad/funny things always are remembered more than the good. My two worst cooking tragedies - 1 - in college - til that day I had never made grilled cheese. So, I called a friend to figure out how to do it b/c I knew you had to do something to the bread so it wouldn't stick. I have never lived that down. - 2 - I made my first angel food cake. I never realized how much it truly "rises". It said specifically on the instructions to place on the bottom rack and remove any other racks above it. The difference between my bottom and top was about 6 inches so I decided to leave it be. When the timer went off I opened up to find angel food rack cake. The cake had baked itself all over my top rack. The part that was still in the bundt pan was great but half the cake went to the sink with the rack.

Pudding No-Bake Oatmeal Cookies
This recipe is a new staple for us! I love it! I did adjust the portions based on a few reviews and wanted to cut down on fat - I used 1 stick of butter (1/2 cup), 2/3 cup of sugar. They turned out so yummy, and not sure if the reduction in butter made them less gooey but mine sat fine. Not sure where they get 48 servings though, I made 24 rounded tablespoons and they turned out great! Thanks for sharing!

Italian Meatball Sandwich Casserole
Excellent. Just some small changes based on other reviewers. I added oregano, italian seasoning and garlic to the meatballs. I swapped ricotta cheese for the mayo and did not use the water for the sauce. I did toast the bread before hand and just spread the cheese mixture on each slice. Turned out super gooey and yummy! Thanks so much for sharing!

Banana Cake Cookies
YUMMY!! Excellent! Reduced powered sugar in the frosting to 2 cups and it was exactly enough. My daughter ate them up - with nuts and all!
