Black Beans and Pork Chops

Excellent! Great quick meal that everyone loved. Only slight changes were I dredged the chops in flour before adding to the pan which helped to thicken the sauce. Drained and rinsed the beans so added about 1/4 cup water to the pan to make up for the missing juice. Added some garlic as my salsa had none. Would make again!

Mexican Bean Salad

I LOVE this recipe. We usually make it without the last three ingredients since my husband and I have differing spice requirements. He adds the last three ingredients to his. I also half the oil, vinegar, and sugar as suggested in earlier reviews. It is a great recipe to have a little helper help you make (just omitting the hot items) – my 3 yr old loves it. We even add tomato if we have some. Everyone usually has several helpings.

Day Before Pay Day Fried Rice

Really yummy! I took the advice of other readers and used butter to fry the egg and sesame oil for the rice. I also added shitake mushrooms since I had them. Great quick dinner!

I think the amount of allspice was a bit too overpowering and would suggest adding about 1/8 tsp instead. I omitted the parsley as I am not a big parsley fan, but think it would be fine with it included. The onion would be better sauteed first so it would not be crunchy in the final baked dish. Also as for the grease another reviewer mentioned, just remove the meat from the pan and set on a cooling rack to cool and to drain any grease. I would make again with the above modifications and maybe add some bread crumbs to keep the meat from being so dense.

Slow Cooked Corned Beef for Sandwiches

Excellent! I am glad I doubled the recipe so I had plenty of leftovers. I used Guinness and I did really like biting into a soft peppercorn for a kick, but next time will use 1/2 the amount as the pepper was too overpowering for younger taste buds. My mouth is still watering thinking about how good this tasted.

Tzatziki Sauce II

Very good and was even better the next day! I used whole fat Greek yogurt and a little less mint (only because I did not have enough) and it turned out great. I served on gyro meat with pita and it was wonderful! This is a keeper. :)

Chinese Pot Roast

Pleasantly surprised! Very good recipe. I did take the advice of other reviewers and use low sodium soy sauce, garlic powder, and a little less water. After baking, I removed the meat from the pan and tented on a plate. I finely sliced some onion, added to the liquid and reduced it on the stove for about 30 minutes on medium. Then I added the cornstarch mixture, cooked a little more and it was perfect! Will definitely make this again!

Baked Snapper with Mandarin Oranges, Cashews and Ginger

Very yummy! I actually used Tilapia this time and it was equally as good as the snapper. The only thing I modified was to finely grate the ginger to evenly disperse the ingredient into the dish. I grate the ginger by turning it clockwise each time so as to not get the stringy pieces. Very easy!

Pork Chops with Delicious Gravy

Very yummy!!! We all loved the sauce. All I did differently when preparing this was to add 1 TBS of Olive Oil to the butter in the pan so as to not burn the butter. I also did not add the season salt as I am not a big fan. Just salt and I was good to go. My two year old licked the spoon clean. :)

Lambless Shepherd's Pie

This was a hit at Thanksgiving! It does take a while in prep time, but is worth it. Very good flavors and textures. It also freezes well. I have made it several times since November and my family loves it.
