Apple Strudel Muffins

doubled the recipe & made 36 muffins. I used 3 cups shredded apples, covered them in 1 cup sugar & 1 tbsp cinnamon. Then added an additional 1.5 cup finely chopped apples.

Peach Muffins

Had to make changes, to make it a great muffin. Lowed temp to 375. Added 4-5 very ripe peaches, finely diced peaches. Tossed peaches in 1/2 cup white sugar. Used 2.5 cups brown sugar instead of white. Added 1/2 cup milk to liquids.

Extreme Chocolate Cake

excellent!! used fresh hot sdtrong coffee instead of boiling water. used a full 2 cups of cocoa and 2 cups of flour. batter was not soupy and baked up beautifully as a 9x13 cake. baked for an hour.

Excellent recipe! I used butter instead of shortening & buttermilk in place of milk. I also add more sugar when eating them with whipped cream & berries, or leave the sugar out & add cheese & garlic, parsley & onion for herbed biscuits. We also make them plain for stews & soups. Soooo yummy!!

Cheesy Potato and Corn Chowder

left out the chilis & country gravy mix & used chicken gravy mix instead & added fried bacon pieces & added more celery & added some thin carrots. Sauted onions & veggies a bit in bacon fat then drained. Super yummy!!!!!

Classic Bran Muffins

My kids LOVE these! I actually use way more buttermilk then stated, almost double...to soak the bran in. The result is extremely moist yummy muffins that my kids gobble up!

Judy's Strawberry Pretzel Salad

I used fresh strawberries, so for the jello, I added 3/4 the amount of water the box called for. I also placed dessert in freezer to help set before pouring jello ofer strawberries. I also placed jello mix in bowl in freezer fro 20 mins to thicken up before spreading/pouring over strawberries, then placed back in freezer for 15 mins, then in fridge for an hour before serving. Jello set perfectly on fresh strawberries & looked like a gorgeous glaze!

No Bake Cheesecake I

So yummy! I used double sugar & extra butter in crust, and used 3/4 cup sugar beat in with the cream cheese & folded in 1.5 cup whipped cream & topped with strawberries & blueberries.

Irish Lamb Stew

I served this tonite to family & friends & they RAVED about it!!! I used wine instead of water to deglaze pan, I added 2 cans of Irish beer & used 6 potatoes, 2 kgs of thick bacon & 4lbs of lamb. I also added 1 cup diced celery. I browned meat then added all to slow cooker & set on low for 10 hours, then thickened it up a bit with flour. It was AMAZING.

Amazingly Easy Irish Soda Bread

I lowered the temp to 360, and baked for an hour. I also used my kitchen aid mixer to mix the dough. I basted the bread with the buttermilk mixture 5 times throughout baking & the end result was the BEST we have ever tasted!

Cinnamon Rolls III

Excellent!!!! I accidently added the pudding to the flour mixture on top the liquids but it turned out wonderfully! I also made a bit of a sticky sauce on the bottom of the pan with butter, brown suagr & cream before placing the rolls on top. I aslo iced the rolls when still warm so the icing melted a bit into the rolls.

Sweet and Sour Pork III

Very yummy. I think the pork should be added on top, not mixed in with the sauce as it gets soggy & looses its crispness. The sauce also needs to be boiled for quite awhile to thicken up nicely.

Scalloped Potatoes and Onions

Made these in the slow cooker on low for 10 hours. very yummy. I did add 1 tsp onion powder & 1/2 tsp garlic powder too add more flavour. Put whole crockpot under broiler for a couple minutes to get a nice golden top.

Italian Spaghetti Sauce with Meatballs

It was okay. I was expecting something much better. Meatballs are extremely bland, need some sprucing up. Tossed it all in the slow cooker for 12 hours. Will probably try sprucing up the sauce & meatballs next time.
