Donut Muffins

This is a pretty easy, kid friendly recipe. I made this today to have for Christmas morning & I went ahead & mixed the cinnamon into the muffins just in case I decide not to douse them in the morning. I also doubled the recipe & I tried one fresh out of the oven w/o the butter & topping & it was very good.

Fluffy Pancakes

This is a GREAT recipe for homemade pancakes! I made them for my family tonight & the only thing I added was good MExican vanilla. I also doubled the recipe as suggested as there are 5 of us & I still had a few to put away for breakfast b/c they are so filling we each just had 2. This will be a staple for us from now on.

Oat Waffles

This is a great recipe! It sort of tastes like the Kashi waffles I love but won't buy b/c they're so expensive. I blended the whole thing in my blender since I had to use it for the oat flour & I added 1/4 c of flax meal but I add that to all of my recipes for health reasons & it doesn't take away from the integrity of the recipe. I also subbed regular coconut milk b/c I'm lactose intolerant but again, it baked up like a regular waffle. Thanks for sharing this great recipe!

Cool Whipped Frosting

I am a food snob & everyone I know knows that about me but even I know that if you're making a recipe that includes cool whip, it's going to taste like cool whip! It's entirely unfair to rate these types of recipes as if you expected something gourmet. This is a great, easy thing to whip up that you can top cupcakes with or use as a quick mousse. I'm not a fan of cool whip at all & rarely use it but my daughter likes to bake & she loves mousse so we've done this one several times & it's always a hit & so versatile too. We used it to top the Simple White Cake from this sight that we made into cupcakes & we have also subbed the milk for dark chocolate almond milk & it's great!

Simple White Cake

I thought this was a great recipe, if you're expecting something gourmet this isn't it but if you're looking for a simple recipe that you can play around w/ & make it personal for many occasions this is it. My 11 yr old made these almost all by herself & we beat the tar out of each addition till everything was light & fluffy. She added mini chocolate chips & made the Cool Whipped Frosting from this sight to top them with & it made a sweet Sunday treat for everyone. So versatile you can do practically anything with this. We did up the milk to 3/4 c but other than that we followed the recipe exactly.

Pumpkin Casserole

This is an amazing yummy dish! My husband would sit & eat an entire dish of it if I let him. So easy to whip together & a great alternative to holiday meals where something pumpkin is expected for those of us who don't like pumpkin pie. I always cut the sugar in half & it's still SO good! I also add in some fresh nutmeg but that's just a taste thing. Great Recipe, Thanks!

Incredibly Cheesy Turkey Meatloaf

This is a really great basic meat loaf recipe. I have used my own mexican meat loaf recipe for years but was looking for something specific to do with ground turkey & ran across this one. I did make a few changes but not anything that totally changes it. I used grated cheese, my own unflavored bread crumbs ( I put heels in a freezer bag to keep for this purpose) which I also soaked in the milk. I also added in about 1 c of a frozen onion,green pepper & celery blend & some Worchestershire & garlic salt. I topped it w/ Sweet Baby Ray's BBQ sauce & my family polished off the entire thing! I had 3 lbs of meat so I adjusted the recipe & made 2 loafs one of which I put in the freezer to bake later. We were a little disappointed b/c there weren't any leftovers to make sandwiches with so I may have to pull it out sooner rather than later. All of my adjustments were more for taste than the mechanics of the recipe. Thanks , we love it!

I have used this recipe for years & it is so easy & perfect for things like baby or wedding showers! So pretty & customizable. The only thing that I do differently is use powdered sugar instead of white sugar. I'm not sure how much of a difference this makes but next time I'll try it w/ the white sugar to see.

Lemon Cake

I made this cake for my husbands birthday & it was delicious! I didn't make a layer cake but cooked it in a 9 by 13 pan. I also used fresh whipped cream instead of cool whip b/c I always sub those in every recipe & I used dried lemon essence instead of lemon flavoring but otherwise I didn't change anything & everyone loved it! Light & creamy, the perfect balance between the sweet & tart.

After-Thanksgiving Turkey Soup

This is a great recipe! I had to make a soup for our PTA Teacher Appreciation Lunch @ my daughter's school & had an extra turkey in the fridge for Thanksgiving. I wanted to do something a little different & this was perfect. I admit I did add more seasoning than was called for, but I thought it needed a bit of pumping up in the flavor dept. I added garlic, poultry seasoning & basil. My husband thought it tasted like chicken & dumplings & said we should do dumplings next time instead of rice.

Scottish Shortbread IV

This is an exceptional recipe for shortbread! I make a shortbread chocolate chip cookie & this is the same base but w/ chips added & cooked as a drop cookie. I followed other reviewer's suggestions not only from this recipe but from many of the other ones on this site & used only 4 c of flour & I also believe it was perfect! I added a splash of vanilla & patted it out into a jelly roll pan & pricked it & sprinkled it w/ sugar crystals. My daughter had to have an authentic Scottish dish for a presentation @ school & we did it late @ night so we chose this option instead of of individual cookies. I cooked it about 22 min & let it cool b4 cutting into bite size pieces & it didn't crumble @ all. Absolutely melted on our tongues!

OREO® and Fudge Ice Cream Cake

This is an amazingly easy recipe! My son wanted an oreo ice cream cake for his bday party & after seeing what was available @ the grocery I decided to try for myself & am SO happy I did! I doubled the recipe & iced it w/ bakery icing from this site. I did add a little extra milk to the pudding layer to make it creamier & added more crushed oreos but overall it's the same recipe. SO EASY!! We will be making this one often!

Special Buttercream Frosting

This is a perfect decorating icing. I used butter flavored Crisco which I thought would make it taste even better but I have to say I think it would've been better using the plain, I subbed 1/2 c of shortening fo butter & I think the fake Crisco butter taste was just too much. I used it to ice my son's birthday cake (oreo ice cream cake from this site which I doubled) & I still had a sandwich container of icing left over.

Maria's Rice

This is a great basic recipe! I had a pork roast that I needed a side dish for & I have mastered nearly everything in the kitchen but for some reason rice has eluded me. I decided to try this recipe since it was baked & I am amazed at how well it turned out! I didn't have the french onion soup or beef broth so I used golden mushroom soup & chicken stock & it was delicious! Thanks so much for such a versatile & easy way to put rice on the table.

Roasted Okra

This is so simple yet simply amazing! I always end up w/ a kitchen full of produce every summer & hate to fry anything but that's the only way I know to cook okra. This was such a hit. We will be enjoying this idea all year long!

Pistachio Pudding Cake

This is a good base recipe but it really needs some jazzing up. I found it to be very bland, I almost added another box of pudding & now wish that I had because it really needs it. I also added some white chocolate chips which helped but I don't think we'll be doing this one again as is.

Best Brownies

These are AMAZING!! I will never make a box brownie again. There is nothing cake like about these if you make them correctly, don't use a mixer & beat by hand, which is easy if you let your ingredients come to room temp. I doubled the recipe & made them in a 9 by 13 pan but I didn't double the icing. I just thinned it out w/ a little almond milk & made it into a thick glaze which I poured over them as soon as they came out of the oven. Once it set up it's perfect, not so much icing that you can't eat them with your fingers & not so little that you have a dry brownie top. PERFECT!

Onion Rice

This is a great recipe! I made this for dinner with my mexican meatloaf & it was a big hit. I added a few things just per our taste. I caramelized the onions & added garlic at the end of that along with the rice which I toasted a bit, then added thyme & basil & let it simmer. Great recipe even for my family of onion haters, they couldn't believe it had onion in it ( I used a yellow one).

Beth's Spicy Oatmeal Raisin Cookies

This is a great recipe whether it's Quaker's or not, who cares! I always throw in a box of pudding when I'm baking so I added a box of vanilla & used currants which I soaked in boiling H2O while I was mixing up the batter. I cooked mine for 9 min. in my convection oven & they turned out perfectly although I didn't have the shortening, don't use it, so I used a full cup of unsalted butter. Definitely a keeper!

Nany's Cheesy Cauliflower Casserole

This is really a great recipe, so versatile that you can tweak it quite easily to suit your individual taste. I used fat free evap milk & it didn't take away from the flavor at all. I did add a little curry, salt & pepper for taste but I always pep up seasonings because we like a stronger flavor in our dishes. I also used roasted veggie ritz because that's what I happened to have in the pantry & I really think it added a great flavor to the dish. I baked mine also at 375 & it was perfect. Thanks so much for the recipe, it will definitely be a keeper for us!
