Amazingly Easy Irish Soda Bread

Flaky with wonderful flavor. If we didnt eat it so fast, I would have taken a pic of it! Very easy too. I didnt have buttermilk, but used cream and 1 Tb. vinegar as a substitute. Worked wonderfully!

Chewy Chocolate Chip Oatmeal Cookies

Wonderfully chewy and delish with the proposed changes: +1/2c flour, +1/2 teaspoon baking soda, -1/2 teaspoon salt. I also doubled the vanilla like I do for chocolate chip cookies per cookie advice on this site. A keeper recipe for sure

Easy Tuna Casserole

Really great recipe! A staple for sure at my house. It's evolved to "change it up a bit". Things I've added are celery, broccoli,spinach, water chestnuts for crunch, sour cream for a little more creaminess, and garlic pepper, whatever suits our mood at the time!
