Grilled Radishes
Loved these! Everyone I told this recipe to had no idea radishes could be cooked. I roasted them in the oven since the oven wrapped inside tin foil with all the ingredients (didn't do the ice cube - forgot). They came out soooo tender and sweet and garlicky - not sharp and spicy like raw radishes. I cannot wait for leftovers tomorrow.

Creamy Corn Chowder
Easy, quick, simple! It's not super fancy, but a quick way to make some chowder and use tofu. One tip, it doesn't say to drain the veggies at any point, so just take note of how much you end up pouring in the blender to puree. You don't want too much liquid. I made a half batch because I only had one (big) red potato on hand. Did not peel the potato. Used frozen corn (12 oz) instead of canned corn. Added 2 T of butter into the boiling mixture as well. Sprinkled some dried chives in it too from my garden. As a non-vegetarian, it would be better with bacon.

Easy Chocolate Tofu Pie
Pretty easy and tasty! I got a bunch of silken tofu packages on sale for 99 cents, so I had to figure out how to use them. I had all the ingredients in the house to make this. I only used 12 oz box of tofu instead of 16 oz (didn't want to open an extra box to use part of it) and it still worked fine. The chocolate/tofu mixture is really good, probably could eat it just like that or bake in custard cups minus the crust. When pie is totally cooled it will slice much easier. I would make this again. I'm also lactose intolerant, so even better for me.
