Bulk Venison Breakfast Sausage

I rarely review, but I had to this time! I really don't care for game meat, but my husband is a hunter and I needed something to do with all the "venison burger" we have. This recipe is excellent! I did say I modified this a bit because I am allergic to pork. I omitted the pork and used a pound of ground venison we had frozen (I thawed it). I adjusted the spices a bit since the original recipe calls for more meat than I used. I also used some onion salt and fennel seeds ( a pinch). I used about 1/8 cup of brown sugar. I formed into patties (instead of freezing) and fried in a nonstick skillet with olive oil. There was no "game" taste to this and it is so tasty to me since I can't have typical pork sausage. Thank you for this recipe!!!

Buttermilk Oatmeal Muffins

These are very good and moist. I did use old fashioned oats and really liked the texture, taste. I accidentally used 1 1/2 cups buttermilk and oats, used one egg, same amount of oil and sugar, then realized i had done that. I then added some extra flour and 1/4 teaspoon more of baking soda and flour after I realized but kept other proportions the same. they came out fine. Everyone liked them, thank goodness bc I just bought a 25 lb bag of old fashioned oats by accident !

Whipped Cream Cream Cheese Frosting

LOVE this. It is light and fluffy and not very sweet. I used powdered sugar and just "eyeballed" it. I also added some to the whipping cream after i had it whipped. I combined the cream cheese mixture and whipped cream in the mixing bowl (stand mixer) on "stir", kind of pulsing it, to combine it thoroughly. I used this w/ a chocolate layer cake, with strawberry jam and a layer of frosting in between the layers. There was plenty of frosting for a 9" double layer cake and the husband/ kids to lick. This does not taste like a sugary butter cream, so if that is what you like, it may not be your thing. We all loved it.

Soda Cracker Candy

This is very good, rich , chocolatey and delicious! I used Milk chocolate chips and omitted nuts. Beware, addictive and you will find yourself needing a big glass of milk! I make this on a clear day as its kind of like a candy. Very simple, too. Easy to make multiple batches (that could be bad or good). I have made this with one cup butter/and one cup sugar and one package of chips with just as good results, too.

Fudge Bonbons

These are simply OK. I made them for Christmas this year, and honestly I dont think I will put them on plates. They have a "dark chocolate" type taste, bc of semi sweet chips. It takes awhile to mold the dough and this recipe does make a ton of these. I probably wont make again.

Cranberry Pistachio Biscotti

This is an excellent and very pretty biscotti. I added a touch more flour (slightly less than 2 cups total) and I agree original recipe has too many pistachios, I put in a scant one cup and it was PLENTY. I rough chopped the cranberries. My dough was not as runny as others have described and i had no trouble forming into loaves. This is very very good and easier than some biscotti recipes. Oh, I got 18 decently sized cookies, defintely nowhere near 3 dozen, but the recipe seems easy to double/triple. Highly recommend this!

White Chocolate and Cranberry Cookies

These are great!!! very simple. I adjusted the recipe to make them in a pan instead of drop cookies. They were a big hit with my family. I considered adding some oats, but didnt, but i do think this may add to the overall cookie..So simple to make I will have plenty of time to make more before christmas! Happy holiday!:)

Emily's Famous Marshmallows

These were excellent. Very good recipe. I followed directions exactly and also used the knife in hot water trick. I had read another suggestion stating you would use one packet of gelatin, I used FOUR (that is in one box) to equal 4 Tablespoons of gelatin. I also had to add a touch more hot water to the gelatin to make it dissolve. These are very good, and not as tough to make as you may think. I did make mine on a clear day and I would definitly suggest that to anyone making them. Happy eating!

Roasted New Potato Salad With Olives

My husband and I both thought this was excellent. I eyeballed the herbs and ommitted onions, but didnt think it detracted anything. I will definitely make this a lot and it would be an excellent potluck dish.
