Spinach-Stuffed Salmon Fillets

I made this the other day and it turned out great. I added a little feta cheese, and extra sundried tomatoes packed in oil. I used about a 2 1/2 lb filet, cooked the spinach, then mixed everything together. I lined my baking dish with parchment paper, layed the mixture out on the parchment in a nice neat pile about the length of the filet, and layed the filet on top. After it was done, I sliced the salmon in equal sized filets and carfully scooped each onto the serving platter (flipped over), so the spinach mixture ends up on top. It turned out beautiful, and tasty!! Thank you for the great recipe.

Fried Chicken Gizzards

I've been making chicken gizzards like this for years. One thing I do differently is to boil them for about an hour, and season the water with salt/pepper/garlic powder. It makes them tasty, and tender. Great recipe though!!!

Sweet Corn Cakes

OMG!! I made this recipe a couple nights ago, and let me tell you...these are EXACTLY like Chevy's!! The only changes I made were to substitute cream corn for the 1/4 cup of water, added about 2 tbs of water, and used regular flour instead of masa harina. The texture was perfect, the taste was perfect and authentic. My boyfriend, who's Honduran, said that this tastes exactly like a type of tamale his mother and aunt used to make. All he kept saying was 'wow...wow'. Try this recipe, it's wonderful!! Thanks for the submission.

Breaded Chicken Wings

I love fried chicken wings & this is a pretty darn good recipe!! I have a recipe somewhat similar to this one. I use a mixture of 1/2 flour-1/2 panko bread crumbs, a few scrambled eggs seasoned with hot sauce, salt, pepper, garic powder. Dip them in the egg mixture, then dredge them in the flour/crumbs. Fry them up, and they come out super tasty, and super crispy!! I serve half of them bare, and the other half I drizzle with warmed honey spiked with some red pepper flakes. Either way...you can't go wrong with wings!!!

Shrimp and Crab Enchiladas

This was a good recipe. I chopped the shrimp into small pieces (i didn't use as much as was called for), and I used extra crab. I sauteed them in olive oil with a little seasoning, then mixed the crab and shrimp with a little cream cheese. I also used white corn tortillas to eliminate the soggy issue others had by using the flour ones. I layered the mixture on top of each tortilla and added the cheese, and rolled as per the directions. I also poured a little sauce on the bottom of the dish, so they wouldn't stick. I didn't want my enchiladas to be 'swimming' in the sauce, so I poured just enough to cover them. Covered and baked them as per instructed. With these changes, they came out superb!! I will definetly make these again. Thank you for the recipe.

Uglies

What a great concept!! I changed it up a bit, just to suit mine and my boyfriends taste. I used a burrito meat mixture instead of the bbq, and I used the frozen pilsbury grands (thawed)instead of the canned (they taste sooo much better). Thank you so much for the recipe!!

Sausage Crescent Rolls

My Crab Cakes

These were great. I only made 2 slight changes. 1st I soaked the breadcrumbs in the egg/mayo to soften them up a little. And for the other set of breadcrumbs (the coating), I used Panko. They came out delicious!!

Super Sausage Gravy

This was great!! The only thing I did differently was use a different sausage brand, as my grocery store doesn't carry bob evans...besides that, I followed the recipe pretty closely. I've made this a couple times with the frozen biscuits (so much like homemade). My boyfriend was in heaven. Thanks for the recipe!!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

The only difference between this recipe and the one at my favorite thai restaurant is the sesame seeds. So I left them out. OMG!!! This is sooooo good. I am so excited that I can make this at home. Thank you so much Michelle.

Brussels Sprouts With Franks

I didn't try this with hotdogs, as I'm not really a fan of them. But I DID try this recipe with Smoked Sausage, and it was awesome!! Next I think I'll make it with Brauts. Thanks for the recipe.

Zucchini Cornbread Casserole

What a great starter recipe. I used 3 cups of zucchini, 1 cup of frozen corn. I also added 1 clove of garlic (I softened the garlic and onion in a little butter before adding to the mix), I added 8 oz of sour cream, cubed 1/2 a smoked sausage link and browned it in a skillet to cook out some of the grease, and to get a good carmalization, and added that to the mix also, used 16 oz of cheese, half in the mix and half on top (I topped it with the cheese after it cooked for about 20 minutes). After all those changes, it was a little thick (imagine that!!), so I added a little milk (not sure how much, just to get it to loosen a bit). I cooked it for the recommended amount of time, and it came out fabulous. With the meat inside, this was definetly the main course. Served with salad. Wonderful!!

Fried Chicken with Creamy Gravy

This was pretty good, but I've made and had better. The only change I made was to marinate the chicken in buttermilk (seasoned with salt, pepper, hot sauce, crushed garlic, and a sliced onion), which always makes it more flavorful and juicy. I just wasn't all that crazy for the coating, so I'll keep looking. Thanks for the post though!!

The Best Veggie Sandwich

I've made this a couple times, and I have always left out the sprouts, just because I'm not a fan. I also use whole wheat english muffins, to make it a bit healthier. I also saute the onions a bit cuz they probably wouldn't cook enough for me 5 or so minutes under the broiler, and sometimes I add shredded chicken breast if I happen to have some left over. Either way, this is a good sandwich.

I love love love this recipe!! I've made it a couple time as written, and I changed it up a little and used a traditional graham cracker crust (pecans can get a little expensive). I love them both!!

Authentic Louisiana Red Beans and Rice

What a great recipe!! I did change it up a little, but mainly because I just threw everything in the crock pot. I omited soaking the beans overnight, and the sauteeing of the veggies (i just threw them in after I chopped them), I added 2 ham hocks, and used 4 cups of chicken broth and 2 cups of water instead of the 6 cups of water the recipe called for, and I left out the sage. At the end, I used a potato masher and mashed about half the beans to give it the right consistency. It was great!! I hate judging a recipe less than perfect when I do things to change it without trying the original first, as it does sound good as written!! I just didn't feel like watching the pot for a few hours!!

White Pizza Dip

I substituted 1 cup cream cheese for the ricotta as I had a feeling it would be too grainy for my liking, and after I read the other reviews I didn't want to chance it. It came out wonderful!! I give it 5 stars for the substitution I made, and for not wanting to penalize a recipe just because I didn't follow the original ingredients!!
