Salsa Chicken

A friend of mine referred this recipe to me and it was so good! I always make my own taco seasoning, so I used that (chili powder, cumin, onion powder, paprika, cayenne pepper, garlic powder). I didn't have salsa, so I used a 10oz can of Rotel diced tomatoes with green chiles and everything tasted delicious. Next time, I will try this recipe as is with actual salsa.

Cocktail Meatballs

I made the meatballs with ground turkey and they were delicious! My husband thought it was a little too sweet. Next time, I will leave out the brown sugar and see if that reduces the sweetness a little. I love garlic, so I also added 1 tbsp fresh chopped garlic to the meatballs.

Delicious Baked Chicken Kiev

This is a good recipe, but I will need to adjust the measurements on the seasonings and butter for my own taste. I scaled down the recipe to 4 breasts and it just seemed more butter, garlic, and parsley was needed.

Chantal's New York Cheesecake

This is the first cheesecake I have ever made. I couldn't find a springform pan in any of the stores, and decided to scale down the recipe and just make mini cheesecakes. They turned out perfect! I baked them in the oven at 350 for 25 min (wasn't sure if I needed a water bath to make the minis, so I put boiling water in a pan on the rack below the cheesecakes). I turned off the oven and let them cool for an hour and then put them in the fridge. I served them with a dollop of heated strawberry preserves (unseeded).

Sherry Apple Pork Chops

I made this recipe as is and it was absolutely delicious and easy! I am always trying to find new recipes to make pork chops and this one will definitely be a keeper in our house. I served the pork chops over rice and with a side of broccoli. The sauce from the chops/apples over the rice was very good.

Chicken Marsala

My husband does not like mushrooms, so I have never bothered to make Chicken Marsala before. This was an excellent recipe! The only changes I made was instead of mushrooms, I used bell peppers and added about 2 cloves of chopped garlic while cooking the chicken. There was enough sauce for the chicken. I do not see any reason the sauce needs to be doubled. Next time, I will try a different vegetable.

Broiled Herb Butter Chicken

I liked the taste of the butter and herbs and that this was so quick/easy to make. The chicken was a little dry though and I thought it needed some salt. I will try this recipe again and follow the other reviews to bake first and then broil for a few minutes at the end.

Slow Cooker Pulled Pork

Excellent recipe! I was skeptical about the root beer, but the pork came out great! I think the root beer gave a slight sweet taste to the BBQ sauce (used Sweet Baby Rays Original). Next time I will make my own BBQ sauce. For those that said that the sauce was too runny, make sure you drain out the root beer from the crock pot.

Spanish Rice II

Recipe was good. I doubled the recipe and the rice came out a little mushy. Next time I will use less liquid and see what happens. I sauteed the onions and bell pepper first. I add some chopped garlic to the onions and peppers. Added the rice until golden and then added chicken broth in place of the water as suggested by others. Overall the recipe tasted good, I just need to use less broth.

Shepherd's Pie VI

Good and easy recipe! I followed the other reviews to use worcestershire sauce. I doubled the recipe and used 1/2 c. worcestershire sauce. I chopped and sauteed 1 onions with about 3 cloves of chopped garlic. I boiled 8 red potatoes (did not peel, let cool, and then cubed them prior to mashing). I diced 3 green onions. I mashed the potatoes with the green onions, 1 tbsp butter, and 4-6 oz sour cream. I did not have carrots and used a bag of frozen peas to spread over the meat mixture.

Stuffed Shells III

Very good recipe! I combined this recipe with Rachel Ray's stuffed shells recipe on the food network site. I use 32oz part-skim ricotta, and add 1.5 cup grated asiago in the mixture. Instead of jar sauce, I saute onions and garlic in olive oil (2 turns of olive oil) and add 28 oz crushed tomatoes. Then add 2 tbsp of oregano and basil (you can also chop about 8 leaves of fresh basil) to the sauce and simmer. Spread some sauce on the bottom of the dish, put the stuffed shells in the dish and pour the sauce over. Cover with 8oz of shredded mozzarella cheese and bake for 50-60 min.

Italian Sausage, Peppers, and Onions

I have made this recipe 3 times over the last 2 months and it has been a hit. Instead of butter, I use olive oil. For a party, I browned the sausages in the pan and moved to a baking dish including some of the grease from the sausage. Sauteed the peppers and onions in another pan and poured over the sausages. I covered the dish with foil and baked it for about 45-50 minutes next to the stuffed shells I made. It worked out perfect, allowing me to converse with everyone when they arrived instead of cooking the whole time.

Grilled Salmon I

Great easy recipe with only one thing I would change next time I make this, which was my fault. For me, it wasn't overpowering with soy sauce or sweet flavor (I did use low sodium soy sauce). My fillets had the skin on one side still. So, I had a great flavor on one side, but the other side didn't. I should have went with my first thought to remove the skin. Next time I will remove the skin.

Margarita Grilled Chicken

This turned out very good. I took advice from other reviews and added about 1/4 cup of tequila to 1 1/2 cup Margarita Mix. I did feel that the chicken needed some salt and pepper when it was done.

Balsamic Roasted Pork Loin

This was my first time making a pork loin and this recipe was very easy. I marinated the loin overnight and grilled it. Since I did not want to use the oven, I tossed out the remaining marinade. It came out great grilled, but I will be making this in the oven for sure next time so I can use the leftover marinade as a gravy over the the sliced roast.
