Baked Ziti I
My first time making ziti, and I was thrilled with the results! Will use a different sauce next time as the one I chose was extremely high in fat and calories so I couldn't eat as many left-overs as I would like :( My only change was using plain Greek yogurt instead of the sour cream because that's what I had on hand - it was still delicious!

Oatmeal Chocolate Chip Muffins
Took these to a muffin exchange this weekend, and they are my husband's favorite of the dozen varieties I brought back. I made a few changes: used applesauce instead of oil to make them more moist and healthier, left out the nuts in case anyone had allergies, added more choc. chips to replace the nuts, added vanilla, used 1/2 whole wheat flour, and left off the topping - didn't need it! Thanks for the great recipe base!

Rossi's Sausage Gnocchi
Super easy recipe to throw together, and yummy! My husband says it's the best Italian dish I've ever made (his Grandma was Italian, so I'm up against that!). The only real change I made was using turkey sausage instead of regular. I did think the dish was a bit salty, so I probably won't add salt to the sauce next time since the rest of the ingredients are high in sodium...
