Ratatouille
This was absolutely delicious! (And I'm not a big vegetable person.) It made much more than I expected, in fact, in order to fit it into my 2-qt casserole dish I had to cut it in half. I served it as a veggie side dish for a dinner party of 5 and had some left overs. Believe it or not, it was even better reheated a few days later. Very simple to make.

Baked Ham
This was delicious! I took it to Thanksgiving with my inlaws (about 50 people, most of whom had been in the restaurant/catering business for year). It was the first time that I ever brought the main dish, and everyone raved about it! Since I could only get a pre-cooked spiral ham, I reduce the cooking time to about 2-3 hours for a 12 pound ham. I marinated it overnight in cola with brouwn sugar rubbed over both sides. Then, during cooking I basted it constantly to make sure that it didn't get dried out. It was super moist and full of flavor.

Asparagus Parmesan
This recipe is hit or miss. I've made it about 6 times now. The first time it was excellent, but each time it's gone downhill. I can't seem to get the right consistency for the asparagus. It's either overdone or underdone. I use thin asparagus since they are usually more tender than the thick ones.
