I love these, my kids love these, people wait for me to hand them out every-year! I have made them with air-popped corn, pan-popped and microwave and all turn out well. If you air pop, be sure to add a bit of salt though. And do be careful to sort the unpopped kernels out though ;)

In all my adilt life I have always been thinking of this exact pancake whenever I wanted pancake, and this is the first pancake - homemade or restaurant that has ever delivered! Perfect texture and moisture level, etc. I did sub as foloows - honey for sugar, lemon juice and milk for buttermilk and strawberries (crushed) for the extra milk. Thanks so much for the recipe!
