Corny Ham and Potato Scallop

Very hearty and easy for a quick dinner. I used cubed hash browns and pre-chopped onions and peppers to make it even easier.

Pumpkin Cheesecake II

This was very good; however, I would cut back on the lemon extract. It was a little distracting from the pumpkin flavor. Otherwise - terrific!
