About this Cook
I'm a 25 year old mom to an amazing baby boy. My husband just got back from his second tour in Iraq, and we're so happy to have him home. I'm slowly working on getting my degree in Library Science so that I can be a Children's Librarian when I "grow up". My husband can be picky, so I love to try and find sneaky ways to get him to eat new foods, or simply the foods he claims to hate (he says fresh green beans are gross, but loves the canned ones!). We're also in the process of introducing solid foods to our son, so it's been fun to make his baby food.
My favorite things to cook
Cakes, cookies, and pies from scratch. I love to make my Dad's Five Bean Chili. My Mom's Corn Casserole rocks so much that I asked the caterer to serve it at our wedding reception. I love cooking anything that I can put my own spin on, I never stick exactly to a recipe unless I'm baking.
My favorite family cooking traditions
My Mom always made us a special Teddy Bear cake for our birthdays when we were little and I can't wait to continue with that tradition for my kids. I love being in the kitchen with my Dad's 4 sisters when they cook. That's when they tell all the best stories. My husband and I make a big breakfast of waffles, eggs, and bacon every Sunday, even though it's just the two of us. I was surprised to learn that I actually like being in the kitchen with him. I love the man, but he doesn't know the difference between a teaspoon and a tablespoon!
My cooking triumphs
The first time I made a pie, Mom always got the premade ones (much as she liked making cakes, she hated any other form of cooking) so I had no guidance other than the recipe. It turned out beautifully.
My cooking tragedies
I like to call them learning experiences rather than tragedies ;) I've caused some minor fires and now my husband is terrified that eventually I'm going to set the entire kitchen on fire.

Ground Beef Zucchini Skillet
This is one of those great recipes for modifying to suit your tastes and what you have on hand. I used half a chopped onion, a can of diced tomatoes, 8 oz of tomato sauce, a huge zucchini, lots of garlic and frozen corn. I had to omit the mushrooms since I didn't have any (bummer). I stirred in some minute rice, and topped it with cheddar cheese. It was quick, simple, and reheated well the next day for lunch.

Czech Roast Pork
Yum! This was delicious. My mother-in-law is Czech, so I thought it would be fun to make something Czech for dinner. I did halve the caraway seeds, and used chicken broth instead of beer. The house smelled wonderful while this was roasting, and the gravy was awesome. I served this with Grated Potato Dumplings (unfortunately those were not well received), and green beans. We can't wait for it to cool down so I can make this again.

Ramen Noodle Stir-Fry
This was great for a cheap weeknight meal! I did sub the flavor packet for chicken broth, and I used a bag of frozen stir-fry veggies for convenience. My 18 month old and husband both ate it, so that definitely means we'll be having this again.
