About this Cook
I'm a 34 year old mother of two toddlers. I've been cooking since I was old enough to follow directions from my mother.I'm not a gourmet cook, but rather enjoy making my grandmother and great grandmother's family recipes.
My favorite things to cook
I love to cook casseroles and soups/stews. I am also getting comfortable using a slow cooker and love it!
My favorite family cooking traditions
My Grandmother was raised in Northern Vermont during the depression. Her recipes were no frill as they couldn't afford fancy ingrediants or sprices, but she was a wonderful cook! She could throw together a meal for 10 people using just what she had on hand, and it would taste wonderful and be inexpensive! If my Grandmother ever put her recipes on here, she would be slammed by some of the "chef wanna-be's" on here because her cooking wasn't fancy, but we always ran to the table when Grandma put dinner on! I serve those same recipes to my family and friends, and often they can't believe that something tastes so good with such basic (and few) ingrediants!
My cooking triumphs
A local restaurant uses my pig marinade recipe for their summer Pig Roasts after their head chef came to our family pig roast (as a friend of a friend) and loved the flavor!
My cooking tragedies
One Thanksgiving I cooked a Turkey and forgot to take the bag of organs out (I mistakenly checked the wrong end and thought they "forgot" to pack them) Funny, but that was the moistest turkey we ever had...although the thought of leaving them in there grossed me out!

Carnation(R) Quiche Lorraine
Delicious! I was forced to make an adjustment when I realized that I only had 5 oz. of evaporated milk...so I used 5 oz of evap milk, and 10 oz of low fat milk. Other than that, I made the quiche as written...it was delicious! I tried another quiche recipe from a "well known" big red cook book, and I was disappointed with how thick and dry it turned out. After following this recipe, I realized I was using too much egg and not enough liquid....what a difference in texture and flavor!! And what a great starting recipe...the possibilities are endless as to what you could add to make different kinds of quiches!! Thank you!!

Chicken Pot Pie IX
I made pretty much exactly as written except I pan fried the chicken instead of boiled....this was fantastic!!! Excellent recipe...thank you for sharing!!

Tex-Mex Beef and Cheese Enchiladas
This was really YUMMY!! I had to make a few minor changes due to ingredients on hand. I used crushed tomatoes instead of sauce, and I added a packet of Goya Sazon seasoning. I did not have american cheese, so I used a pouch of Kraft Nacho pre-shredded cheese and Mild Cheddar shredded cheese. I also used flour tortillas because I personally do not like corn tortilla's...that is a personal preference. I probably used more cheese than the recipe called for just because we LOVE melted cheese!! I also made sure that I cooked down the sauce to get the consistency that I preferred. I also used left over eye of round roast diced up....what a great use for left over beef!! The whole family loved this...can't wait to make it again!! Thank you!!
