Vegetarian Sweet and Sour Meatballs

I've experimented with a LOT of vegetarian meatball recipes over the years to satisfy everyone in our family (meat & nonmeat eaters), and without question, this recipe is the best. The sauce was a bit sweet so next time I will probably use tomato or cream sauce. Otherwise outstanding. Thanks!

Grilled Chile Rellenos

Easy to put together and the sauce was absolutely excellent. Overall, it was good, but I think the potatoes gave it a bit more of an Italian-type stuffed peppers taste, though I did use poblanos.

Caramel-Glazed Flan

Very good recipe. I used nonfat condensed milk and covered it tightly while baking. After 1 hour, I turned off the oven, opened the door & let it sit about 30 min. No problem to unmold after chilling. It was a little soft/curdlike, but not too sweet. Will definitely make again!

Butter Bean Burgers

I used a food processor which might have been a mistake, because they came out a bit mushy and soaked up a lot of oil when fried. My husband liked the flavor much more than I did, but (more importantly!) my 2-year old devoured them.

Raspberry Lemon Muffins

These were not too sweet and great for brunch. I used fresh raspberries and a container of vanilla yogurt. The batter was a bit thick, but I added some evaporated skim milk & they turned out just fine. Yummy! Thanks Kathy!

Super Moussaka

This was easy to make and very good. We had enough with seconds to satisfy my family of six. I did replace half of the bulgur with meatless crumbles, and added 1 tsp cinnamon to a large can of crushed tomatoes for the tomato layer. Next time I will probably add minced mushrooms to the bulgur/crumble mixture for a bit more depth.

Cucumber Sandwich

Five stars because I absolutely *hate* cucumbers but *loved* this sandwich! All the ingredients compliment each other so I wouldn't change anything. We made extra sandwiches and wrapped them tightly in foil for a "pan bagna" lunch the next day!

Easy Vegetable Pot Pie

Very quick, tasty & was devoured by my kids (actually there wasn't enough!!). To cut back on the fat content of using two piecrusts, next time I plan to double the recipe and cook it as a stew on top of the stove with Bisquick dumplings instead.

Canadian Barn BBQ Sauce

Very quick & full of flavor. I cut back 1/2 cup on the sugar & used it as a simmering sauce for veggie chicken-style nuggets. The kids gobbled it up!

Waikiki Cornbread

Delicious! My husband (not a cornbread fan) loved it! Only be sure to use a large baking dish - I halved the recipe & used an 8x8 pan and it overflowed in the oven. Definitely will make again.

Tahini-Battered Tofu

I gave this a try & baked it. It looked ok going into the oven, but I ended up having to bake it for 45 min (!) and it still didn't really brown. Also, it was pretty bland. Sorry - not a keeper.
