Lasagna Spirals

The only two mods I make on a regular basis is that I use frozen spinach (thawed & drained) instead of broccoli and I leave out the scallions. Other than that, this recipe is a keeper in my family.

Alternative Baked Salmon

Loved it. Mods I made are as follows: Used shallots instead of onion (didn't have one), sauteed fresh garlic instead of dried. Cooked it a tad longer in oven. When I first pulled it out of the oven, I was skeptical, but after a couple of minutes in the broiler, it was wonderful! Will definitely make again. Also served it with lemon wedges on the side. Yum.

Loved this! I did use fresh chopped basil instead of dry and lots of it. I also added extra lemon juice. I will make this again. It's so easy.

Grilled Garlic Potatoes

These potatoes were SO delicious. Easy to make, too. The only modification I made was adding extra butter and a little bit of olive oil. I also mixed all of the ingredients, with the exception of the butter, which I dotted on once they were on the foil, in a large bowl before assembling them on the foil. I threw them on the grill and forgot about them! Flip once...yum. Be sure to PAM the heck out of your foil, too. Also, make sure you slice your potatoes THINLY; otherwise, they'll never cook right. I'll make these again & again.

Greek Bifteki

These were easy and good. However, I'm a little bit of a numbskull when it comes to the grill. Call it a female thing. My grill was a tad too high and I flipped them too early, so unfortunately, they broke apart a little bit. However, the taste was wonderful. When you make the patties, be sure to make each pattie on the thin side, otherwise you'll end up with a gi-normous burger that takes forever to grill. I'd make these again and I'd also try other types of cheeses, too.

Kathy's Roast and Vegetables

Overall tasty! Here are some mods I made. I used sirloin tip roast b/c it was on sale. After I seared the meat, I couldn't let all the yummy bits on the bottom of the pot go to waste, so I deglazed the pan using some red wine and added that to the mix. I also added mushrooms & celery and a 1/2 cup of red wine. I also used 1 can of Roasted Garlic Mushroom soup and 1 can of lower fat regular Mushroom soup. The meat came out so incredibly fork tender! Like with other reviewers, I ended up with lots of juice. Served it over wide egg noodles. One word=HEARTY!

Ramen Noodle Salad

I made this to bring for X-mas. Everyone loved the refreshing taste of it. I doubled the recipe and unfortunately, the noodles were quite unruly to deal with. I will make it again for a party.
