Spinach Stuffed Chicken Breast
Delicous! I seasoned my chicken breast with a little Good Seasonings Italian Dressing (dry packet)and I used low fat sour cream and turkey bacon and cheddar cheese instead of the jack. I also added some green onions and a chopped roma tomato to the spinach mixture. I had a lot of spinach mixture left over so I cooked Trader Joe's brown rice (3 min in the microwave) and added the left over spinach mixture to the rice. I broiled it in the oven for 5 minutes and I had an instant side dish! I will definitely make this again.

Bacon-Wrapped Halibut
Halibut wasn't in season so I used jumbo shrimp instead. I grilled them on my panini press. Easy and delicious!

Baked Bar-be-que Chicken
Very easy to make. I took the advice of a previous reviewer and seasoned the chicken first with a BBQ mixture of sugar, salt, ground black pepper, paprika, cayenne pepper, and garlic powder (you can get the exact measurements from the Texas Pork Ribs recipe). I let it marinate in the fridge for a few hours and then I baked it at 350. For the last 8 minutes, I put it in the broiler to get crispy and brown. Perfecto!
