Antipasto Squares

Loved this!! Got creative since some reviewers said it was bland- I brushed the top layer with prepared pesto before the final layer of crescent dough and egg. It was a huge hit at my party!!

Old Fashioned Coconut Cream Pie

My daughter wanted this as her "birthday pie." It was FANTASTIC!!! I did substitute a 13.5 oz. can of coconut milk and a 12 oz. can of evaporated milk for the half and half. Otherwise, followed exactly. My dad said it was "exceptional" and he has been a pie lover for 73 years!! The custard was lovely and set up nice and thick, and not too coconutty, just right. We topped it with light cool whip, and that was perfect, not too heavy. A keeper!

Country Pumpkin Muffins

Great recipe! I was not going to change anything, but then decided to try some of the mods other reviewers suggested. I did 1C white sugar and 1/2C brown. I did 1 1/2C reg flour and 1 1/2C whole wheat. Instead of water, I used apple cider (I figured "why not?"). I added a little extra cinnamon and some ginger, but felt it still could have used a bit more spice. I divided the batter and added semisweet choc chips to 1/2 and dried cranberries and walnuts to the other 1/2. Both were very yummy, especially right out of the oven! Will make again!

Kathy's Roast and Vegetables

Fantastic! I made it according to recipe, only left out the potatoes and did mashed potatoes on the stove. It was wonderful. The leftovers were also awesome! Thank you, thank you, this is the best pot roast I ever made. One hint, place roast in crock pot with fat layer UP. I read this in a magazine, then the fat melts down into the meat as it cooks, I do believe this helped my roast become sooooooooooooo tender!!!!

Minestrone Soup I

It is wonderful! I made a double batch for a luncheon and only made a few changes; no cabbage, and I used Hunt's fire roasted diced tomatoes instead of stewed. Delicious! Gets better as it sits too, so the leftovers were yummy! Thanks!

Easy Corn Chowder II

This was wonderful! I made a double batch for a luncheon and everyone loved it! I did add diced cooked chicken breast at the end and let it simmer to incorporate it. I also used skim evaporated milk, and thinned the whole thing with chicken broth as it is very thick. Loved it, will certainly make again!

Ambrosia Fruit Salad

Excellent recipe, so easy! I used the Creamy Cool Whip like other reviewers and also left out the spices. I made 1 1/2 batch for a luncheon and it was almost gone when I cleaned up! I will definitely make again!

Chicken Noodle Salad with Peanut-Ginger Dressing

We loved this! I substituted apple cider vinegar for the rice vinegar, but that's the only change I made. We also ate it hot (I stir fried the veggies and warmed the dressing in the micro). It was delicious!!! Will make again and again! OK, I made it again for a luncheon, and served it cold. I made it the day before and it did get a little dry in the frig so I spruced it up with a little italian salad dressing. This worked perfectly, everyone loved it!

This is a really sweet recipe! I added a package of vanilla pudding mix, 1/2 tsp of nutmeg, and a 1/4 tsp of cayenne pepper for a teeny kick, and they were perfect.

Three Bean Dip

This was really yummy. I did make some changes due to what I had on hand. I used a 4 ounce can of chopped green chilis instead of the pepper, and only half a can each of black and white beans, I thought two whole cans would be too much, and one bunch of green onions. The best part is this stored very well in the frig and we ate off it for 3-4 days, and it did not get soggy or gross! My whole family loved it as well as the friends I originally made it for the first day! Will make again!

April's Roasted Red Pepper Cheese Ball

Fantastic! I served this at book club and everyone loved it! My family loved the leftovers! I added the Dijon mustard as other reviewers suggested, and more garlic. Probably best to make a day or so ahead, and coat with parsley the day you are serving. I found with each passing day, the flavor improved! Delicious, a keeper!

Tiramisu II

Fantastic!! My daughter and I made this together and it was the best. It was hard to wait over night to try it, but we waited. I did double the coffee/rum mixture and it was just right as suggested by other reviews. The other thing I did was to add a little sugar to the whipped cream, maybe a little less than 1/4 cup. Will definitely make again!!

Whoopie Pies VI

Very good recipe. We liked the cake part, it was chocolatey enough for us. We had to double the filling part of the recipe to fill all the pies. We did cut back the butter, using only 3/4 the amount. It was thick enough, and did not leak out like some people put in their review. Will make again, these were yummy!!

Classic Macaroni Salad

Fabulous! The only substitutions I made were using rotini instead of elbows (a 1 lb. box), Splenda instead of sugar and rediced fat mayo. I took it to a Labor Day picnic and everyone loved it. I will definitely make this again!

Mexican Rice II

I made this recipe scaled up to 15 servings for a Mexican themed luncheon. Everyone loved it! I did use brown rice which increased the simmering time to about 1 hour, and needed about 1/2-3/4 cup extra water. Will make again!

Roasted Garlic Cauliflower

Great recipe!! My husband loved it, and he is not a cauliflower fan. I also sliced up some red potatoes into wedges and tossed them in olive oil, salt, pepper and parlic and roasted them at the same time. Both were great!

No Bake Sugar Free Cheese Cake

I made this for my diabetic father- in-law for a family gathering. He liked it and so did everyone else who tried it!! I did add an extra low fat cream cheese, but that was the only change I made. Good recipe for company who are watching their sugar intake!

Chocolate Mayo Cake

I grew up with mayo cake and always loved it. This recipe is just like my mom used to make! Mayo cake is rich and dense, that is how it is supposed to be. Mom used to frost with peanutbutter frosting, but I used store bought cream cheese frosting and it was great! Thanks!
