About this Cook
I love to travel! And going to places near and far has exposed me to different cultures and different foods. My favorite thing to do while traveling is to eat the local foods. To taste the spices, the sauces, the fruits, and the flavors of the world have me running home to recreate what I experienced to share with the rest of my family and friends.
My favorite things to cook
I love cooking dishes that are simple, quick, and bursting of flavor. I am known for giving my foods a little kick by adding spicier cheese or adding few dashes of spicy red pepper flakes. In baking, I usually replace my vanilla extract with rum or cognac. I love cooking latin influenced dishes and baking anything with chocolate.
My favorite family cooking traditions
When I first met my husband, being in college, there were times the only thing we could afford to make for our anniversary was spaghetti and meatballs. So every year, we remember those times and celebrate our anniversary with a big plate of spaghetti and meatballs!
My cooking triumphs
My husband comes from a family who is known for their cooking abilities. And every year, the only thing he wants for his birthday dinner is lasagna. Well, my ultimate cooking triumph was when my husband started requesting my lasagna for his birthday instead of his mom's or grandmother's!
My cooking tragedies
For some reason, I don't like to taste my food while I cook. For the most part, it doesn't matter as I eyeball everything and it comes out great! But there have been a few times where my eyeballs were wrong and the dish doesn't come out just right.

Pineapple Filling
Really good recipe. But I had to make it twice to get it right. I don't have a double boiler, so I put a smaller pot in a larger pot. The first time, it never got thick enough. Frustrated, I put the mix in the fridge and thought I could just use it as a topping for ice cream. The next day, I tried it again. This time it took FOREVER, but it eventually thickened up. I realized that the first batch never thickened up because the pot never got hot enough. So, I grabbed the previous batch from the fridge and put it in a pot directly on the burner on low. And it actually thickened up quickly! The end result is a wonderful filling. Thanks again for the recipe.

Banana Muffins II
Absolutely delicious! Right before placing them in the oven, I sprinkled a little bit of raw sugar on top to give them a "crunch". Thanks for the recipe!

Scrambled Egg Brunch Bread
I can't believe how quick and beautiful this dish came out! I made two for a surprise wedding shower for a co-worker and they were a hit! I made one with no meat (for the vegetarians) and one with deli turkey instead of ham. I also replaced the cheddar cheese with pepper jack cheese for an added kick. It was the first thing to go and everyone asked for the recipe afterwards! I will be making it again soon. Thank you this recipe.
