Romanian Apple Cake
This was really good the 2nd day. 1st day it tasted way too sweet with cream cheese frosting (while recipe doesn't state frosting, the picture kind of infers it). In any case, it was really good!

Mulligatawny Soup I
This was awesome. Like so many others, I fudged with the recipe to come up with my own. My changes: double the recipe; use 1/4 cup olive oil instead of butter; add 1 tbsp minced garlic; add 3 tsp garam masala (look for indian ingredients at your local Publix); add 1/2 cup lite coconut milk and 1/2 cup fat free 1/2 & 1/2. Pair with good fresh bread, and dip/scoop soup into your mouth. Nom nom nom nom! Everybody loved this, and by doubling the recipe, you get some yum-yum leftovers!

Spinach Casserole
Everybody really liked this one. I did make some substitutions. I used fat free cream cheese and I cubed it instead of softening it and incorporating it. I used 3 frozen spinach boxes. I used 2 cans of Cream of Mushroom soup.
